You can make this for breakfast or dinner. This is also a great dish to make ahead, store in the refrigerator and bake the next morning or evening.

This recipe is a great starting point, but it's definitely customizable. I like to add some chopped vegetables, like bell peppers, onions, or zucchini. I also like to use different types of sausage, like Italian sausage or chorizo.

I'm not sure what went wrong, but my rice and sausage casserole turned out really dry. I think I might have used too much rice. Next time I'll try using less rice and more liquid.

I made this recipe exactly as written and it turned out great. The only thing I would change next time is to add some more spices. I think it would be even better with a little bit of chili powder or cumin.

I'm not a big fan of sausage, but I really enjoyed this dish. The cheese and rice were so flavorful that I didn't even miss the sausage.
