Refreshing Napa Cabbage Salad image

A delicious and refreshing salad that is perfect for the summertime. It is ideal as a light lunch or side. A tangy salad with a kick!

ΒΌ cup rice vinegar
2 tablespoons honey
1 tablespoon grated fresh ginger
1 tablespoon soy sauce
2 teaspoons wasabi paste
1 teaspoon sesame oil
1 head napa cabbage, shredded
1 cucumber, peeled and sliced
1 red bell pepper, cut into matchstick-size pieces
1 large carrot, shredded
3 tablespoons sesame seeds
1 avocado, diced

Steps:

  • Whisk rice vinegar, honey, ginger, soy sauce, wasabi paste, and sesame oil together in a bowl until vinaigrette is smooth.
  • Combine cabbage, cucumber, red bell pepper, and carrot in a large bowl. Pour vinaigrette over cabbage mixture and toss. Refrigerate for 1 hour.
  • Heat a skillet over medium heat; cook and stir sesame seeds until toasted, 3 to 5 minutes.
  • Garnish salad with toasted sesame seeds and avocado.
