Passover Fruit Kugel image

A delicious Passover recipe that freezes well.

Number Of Ingredients 7

1 can(s) (32 ounce) crushed pineapple with juice
8 eggs
2/3 c sugar
1/2 c matza meal, can use 3/4 cup
4 peeled and grated apples
1/2 c oil
1/2 c chopped dried apricots

Steps:

  • 1. Combine pineapple, apples, eggs,sugar, oil and matza meal. Fold in apricots. Batter will be thin.
  • 2. Pour into greased 9 inch X 13 inch pan.
  • 3. Bake at 350 degrees for 45 to 60 minutes.
