Oven Baked Thai Style Fish Cakes image

I found this while looking for recipes to use all the fish we've been catching. It's similar to Russ's Crab Cakes he makes and just as good. We cooked ours in a little oil in a pan 9no oven) but have submitted the original recipe.

Time 50m

Number Of Ingredients 10

2 cups mashed potatoes, cooled, JUST potato

2 tablespoons chopped fresh coriander leaves
1/2 teaspoon finely chopped fresh coriander root
1 small red chile, finely chopped
1 teaspoon grated fresh ginger
1 garlic clove, crushed

1 egg, lightly whisked

Steps:

  • Spray a baking tray with spray oil.
  • In a mixing bowl combine first 7 ingredients. Mix well.
  • Divide into 8 equal round cakes.
  • Coat with flour, then dip in egg and finally coat with the crumbs.

I'm allergic to shrimp, so I used imitation crab meat instead. They were still delicious!

I followed the recipe but my fish cakes didn't turn out as good as the ones in the picture. I'm not sure what I did wrong.

The dipping sauce was really good, but the fish cakes themselves were a bit dry.

I'm not a big fan of fish, but I really enjoyed these cakes. They were so light and flavorful.

These fish cakes were a little bland for my taste, but they were still good. I think I'll add some more spices next time.

These fish cakes were a hit! They were so flavorful and juicy, and the dipping sauce added the perfect amount of tang and spice.
