MIXED GREENS WITH POMEGRANATE SEEDS AND GOAT CHEESE image

Dressing
¾ Cup of Olive Oil
¼ Cup of Red Wine Vinegar
1 T. of fresh lemon juice
2-3 garlic cloves (pressed)
1 T. Dijon Mustard
3/4 t. of dried Thyme
Pepper and Kosher Salt
Salad
Mixed Spring Greens
1/2 large Red Onion, sliced in rings
1/2 Cup of Pomegranate Seeds
Honey Roasted Almonds
Crumbles Goat Cheese (Feta or Montrachet - about 1 Cup)

Steps:

  • Whisk all dressing ingredients together and set aside. Place mixed greens in large salad bowl, layer with onions, pomegranate and nuts. Crumble goat cheese over salad and serve with dressing on the side or toss with dressing, adding goat cheese last.
