I made this casserole in a slow cooker and it turned out perfect! I just browned the chicken and then threw everything in the slow cooker on low for 8 hours. It was so easy and delicious.

This casserole was a little too spicy for my taste, but my husband loved it. I think next time I'll use less chili powder.

I'm a vegetarian, so I used tofu instead of chicken in this casserole. It turned out great! The tofu absorbed all the flavors of the sauce and the casserole was very filling.
