1/4 cup diced dried apricots
1/4 cup dried cranberries
1/4 cup chopped fresh mint
1 teaspoon balsamic vinegar
1 10-ounce box couscous

  • Transfer lamb to plates. Top with chutney. Spoon couscous alongside.

This was my first time cooking couscous and it was a success! The lamb was tender and flavorful, and the couscous was fluffy and cooked perfectly. The chutney was also very good, but I would have preferred it to be a bit spicier.

This dish was a bit too spicy for me, but my husband loved it. The lamb was cooked perfectly and the couscous was fluffy and flavorful. The chutney was also very good, but I would have preferred it to be less spicy.
