I read this recipe on the internet and decided to save it..by the comments, I had a 50/50 chance of getting a great dish of fudge. I was tired of the other way that did not turn out for me most of the time, so this is the one I will use for any fudge making from now on! FUDGE
2 c semi-sweet chocolate chips
1 14 ounce can of sweetened condensed milk
2 Tbsp cold butter
2 tsp vanilla extract
WALNUT FUDGE: ADD
1/2 c chopped walnuts..plus extra to sprinkle on top
PEANUT BUTTER
1 c semi-sweet chocolate chips
1 c peanut butter chips..plus extra to sprinkle on top
CHOCOLATE MINT
1 c semi-sweet chocolate chips
1 c mint chocolate chips..plus extra to sprinkle on top
PEPPERMINT
1 c semi-sweet chocolate chips
1 1/2 c vanilla or white chocolate chips
1/2 + c smashed peppermint candies...plus extra to sprinkle on top

Steps:

  • 1. I used a Pyrex 4 cup measuring cup or you can use a microwave safe bowl, add your 2 cups of chips (white chocolate, mint or peanut butter as per your choice up above) and microwave for one minute..Stir...chips will not look to much different. Microwave on high for 1 more minute. Stir. Be sure to check and stir the chocolate chips as they melt. Chips will hold their shape and not melt unless stirred. If your chips are starting to melt, stir like crazy until all chips are melted..Microwave for 30 seconds more if needed.. do not over zap the chips or you will burn them.
  • 2. Open the can of sweetened condensed milk and pour into melted chocolate. Stir until blended. The mixture will start to thicken, but this is okay. Do not use Low Fat sweetened condensed milk as it will not set up.
  • 3. Cut you cold butter into small pieces and add to top of your chocolate mixture. Microwave for 30 to 45 seconds, until the butter is melted. Stir again.
  • 4. Add your vanilla
  • 5. Walnuts: add your choice of chopped nuts Peppermint: add crushed candies
  • 6. Stir until smooth and pour into a buttered 9 x 5 loaf, 8 x 8, or 9" pie pan. Top with your extra saved topping and place you dish in refrigerator. Chill for 2 hours or overnight before cutting and serving. I used a sheet of buttered foil with extra over the sides to line my pans first..then I just lift out the foil (with the extra foil sticking out)when the fudge is set and peel off the foil. Then it is easy to cut into the sizes you want.
  • 7. Store at room temperature or in the refrigerator. Can be frozen for up to 4 weeks. The white chocolate chips may not set up as well so I added 1/2 cup of extra white chocolate chips in the peppermint one.
