English Cherubs image

This is a wonderful brownie variation, and great for those who don't care for chocolate. NOTE: This recipe can be doubled, but not tripled.

1 c brown sugar, firmly packed, divided
1/2 c butter, softened
1 1/3 c flour
dash of salt
2 eggs
1/2 c sugar
1 tsp vanilla extract
1/4 tsp salt
1/2 c coconut, flaked
1 c pecans, fine chopped

Steps:

  • 1. Preheat oven to 350. Prepare a 9" square pan with non-stick spray, parchment or grease and flour.
  • 2. In a large bowl, combine 1/2 of brown sugar,butter, flour and dash of salt. Mix until well blended.
  • 3. Press into bottom of pan.
  • 4. In small bowl, beat eggs till foamy.
  • 5. Add remaining brown sugar,1/2 c. sugar, vanilla and 1/4 tsp. salt. Mix well.
  • 6. Stir in coconut and pecans, and then spread over the batter in pan.
  • 7. Bake for 30 minutes or until lightly browned. Cool. Cut into 1-1/2" squares.
