Curry-Apple Turkey Loaf image

Number Of Ingredients 16

2 cups soft bread crumbs
1 medium apple, finely chopped
1 cup finely chopped fresh mushrooms
1 small red onion, finely chopped
2 egg whites, lightly beaten
1 egg, lightly beaten
1 to 2 teaspoons curry powder
1 teaspoon salt
1 pound lean ground turkey
TOPPING:
2 tablespoons butter
2 medium apples, finely chopped
1 small red onion, finely chopped
1/2 cup unsweetened apple juice
1 teaspoon curry powder
1/4 teaspoon salt

Steps:

  • In a large bowl, combine the first eight ingredients. Crumble turkey over mixture and mix well. Pat into a greased 9x5-in. loaf pan. , Bake, uncovered, at 350° for 50-60 minutes or until no pink remains and a thermometer reads 165°., In a small saucepan, melt butter. Add the remaining topping ingredients; bring to a boil. Reduce heat; simmer, uncovered, for 12-15 minutes or until apples and onion are tender. , Let meat loaf stand for 5-10 minutes before slicing. Serve with warm topping.
