CROCKPOT BLACK EYED PEAS AND OKRA image

I like to find ways to "kick up" the traditional black-eyed peas that we have on New Year's Day. Here is one of my variations that I love to have any time of the year. I usually serve it with hot cornbread. Yummy.....

Number Of Ingredients 9

2 pkg (16 oz) frozen black-eyed peas
32 oz chicken broth
1 can(s) (15 oz) ranch style beans, undrained
1 medium onion, chopped
1 - 2 jalapeno peppers, chopped (seeds and membrane removed)
1 large rib of celery, chopped
1 pkg (12 to 16 oz) frozen sliced okra (not breaded)
8 - 10 slice thick-sliced bacon, cut into1 to 1 1/2 inch pieces
1 can(s) ro-tel tomatoes and diced green chilies

Steps:

  • 1. Do not thaw the peas or the okra.
  • 2. Place all ingredients in your slow cooker.
  • 3. Cook on low for 8 to 10 hours.
  • 4. Serve with your favorite cornbread.

This is a great recipe! I've made it several times and it always comes out perfect. The black-eyed peas are always cooked perfectly and the okra is always tender and flavorful.
