Steps:
- Prepare salsa first to allow flavors to develop. Peel and dice mango. Cut avocados in half. Score the flesh to the skin vertically and horizontally and scoop out flesh. Pull cilantro leaves from stems and chop. Deseed jalapeno and chop finely. Mix all ingredients together and stir in lime juice. Put in refrigerator to chill. Heat oil in pan. Mix together corn meal, flour, salt, pepper and garlic. Rinse catfish filets, leaving them wet. Dredge in flour mixture and place in hot oil. Cook on each side for about eight or nine minutes. Serve with salsa.
