Apple Cheddar Salad With Maple Dressing image

Number Of Ingredients 10

8 cups washed dried and torn into bite sized pieces Boston lettuce or 8 cups mixed greens
1 cup walnuts or 1 cup pecan halves
2 apples, cored and sliced
4 ounces sharp cheddar cheese, shaved
2 tablespoons apple cyder vinegar
2 tablespoons maple syrup
1/2 teaspoon salt
1/2 teaspoon Dijon mustard
1/3 cup vegetable oil
2 tablespoons maple syrup

Steps:

  • In jar with tight fitting lid.
  • combine the dressing ingredients and shake well.
  • Set aside.
  • Preheat oven to 325 degrees.
  • On a parchment lined baking sheet.
  • spread out the nuts that were combined with the syrup.
  • Bake 15 minutes.
  • Cool.
  • To assemble:.
  • Toss salad greens of choice with as much of the dressing as you would like.
  • Devide onto 6-8 serving plates and top with apples, cheese and nuts.

I'm not a huge fan of apples in salads, but I thought this recipe was pretty good. The dressing was really good and the walnuts added a nice crunch. I would definitely make it again, but I might use a different type of fruit, like pears or grapes.
