Tips:

  • Selecting the Best Sweet Potatoes: Choose firm and blemish-free sweet potatoes that are about the same size for even cooking.
  • Pricking the Sweet Potatoes: Use a fork to prick the sweet potatoes several times before baking. This allows steam to escape and prevents the potatoes from bursting.
  • Using Parchment Paper: Line the baking sheet with parchment paper to prevent the sweet potatoes from sticking and make cleanup easier.
  • Mixing the Raspberry Sauce: Combine cornstarch and water in a small bowl to form a smooth slurry. Add the raspberry jam, lemon juice, and water to a saucepan and bring to a simmer. Stir in the cornstarch slurry and cook until thickened.
  • Baking the Sweet Potatoes: Bake the sweet potatoes in a preheated oven at 400°F (200°C) for about 45 minutes or until tender when pierced with a fork.
  • Serving the Dish: Cut the sweet potatoes in half lengthwise and drizzle with the prepared raspberry sauce. Garnish with fresh raspberries and mint leaves for a colorful presentation.
