1 box (15.3 oz) Betty Crocker Fiber One apple cinnamon muffin mix
2 cups canned pumpkin (not pumpkin pie mix)
2 cups water
1 tablespoon vegetable oil
2 eggs
Topping
1 package (3 oz) cream cheese, softened
4 cups powdered sugar
1 teaspoon milk
2 teaspoons vanilla
2 cups chopped walnuts

Steps:

  • Heat oven to 400degreesF. Spray bottom only of 9-inch square pan with cooking spray. In medium bowl, stir muffin mix, pumpkin, water, oil and eggs just until blended (batter may be lumpy). Spread in pan.
  • Bake 17 to 21 minutes or until toothpick inserted in center comes out clean. Cool completely, about 1 hour.
  • In small bowl, mix cream cheese, powdered sugar, milk and vanilla until smooth; drizzle over bars. Sprinkle with walnuts. For bars, cut into 4 rows by 4 rows.

1 cup canola oil
1 can (15 ounces) pumpkin
2 cups all-purpose flour

ICING:
6 ounces cream cheese, softened
2 cups confectioners' sugar
1/4 cup butter, softened
1 teaspoon vanilla extract
1 to 2 tablespoons 2% milk

  • In a bowl, beat the eggs, sugar, oil and pumpkin until well blended. Combine the flour, cinnamon, baking powder, baking soda and salt; gradually add to pumpkin mixture and mix well. APPLE PUMPKIN BARS
2 Cup all purpose flour
1 1/2 Cups brown sugar, firmly packed
1/8-1/4 C ginger
1 1/2 tsp cinnamon
2 tsp baking pdr
1 tsp soda
1 tsp salt
1/2 Cup cooking oil
1/2 Cup milk
1 tsp vanilla
1 (15oz) can pumpkin ( not the pumpkin pie mix)
2 Lg eggs beaten
2 Cups fresh apples (diced & chopped)
FROSTING . . WITH CREAM CHEESE
1 (30z) pkg cream cheese, softened at room temp.
2 Tbs butter, softened
1/2 tsp good vanilla extract
3 Cups pdr sugar
2 tbs milk
add a little ground nutmeg if desired. for added flavor

  • 1. Preheat Oven @ 350. Grease and flour 10 X 15 X 1" pan or use Cooking spray & lightly flour.
  • 2. In Large Bowl, Mix Beat all the Bar Ingredients, (except apples.)Beat on Med. Speed about 2-3 min. Now add apples and fold into mix. Spread into Baking pan.
  • 3. Bake 20-30 min til toothpick tested comes out clean. Cool Completely, approx 1 hr. before frosting.
  • 4. FROSTING: in a small bowl beat cream cheese with the butter, until blended well. add vanilla, add pdr sugar 1 cup at a time beat on Low til mixed well, add 1 tsp milk at a time mix til smooth & spreadable. Frost your Cooled Bars. sprinkle with the Nutmeg. Place in refer about 30 Min. for frosting to set. cut into bars cut 6 X 8 rows to make 48 small bars. Store in the refer if they last that long. Topping suggestions: Candy corn, Mini pumpkin candies, Sprinkle of chopped Nuts or pecans. orange mini chips or halloween picks. Enjoy.

1 teaspoon salt
1 teaspoon baking soda
1 teaspoon baking powder

1 (15 ounce) can pumpkin puree
2 cups shredded carrots
1 cup crushed pineapple
