POTATO ONION SUPREME

Potato Onion Supreme image

I'm a pastor's wife, and I often find myself cooking for large groups. I first put together Potato Onion Supreme for a wedding shower dinner when our organist's son got married. Afterward, I had three requests for the recipe! This dish is fast and easy, so it's nice for adding a festive touch to a Sunday dinner. But it's equally at home at church potlucks or Grange socials.

POTATO SUPREME

Categories     Potato     Bake     Dinner

Yield serves 4

Number Of Ingredients 6

6 lg. potatos (8 med.)
1/2 C. melted butter
2 c. sharp cheddar (shedded)
1-2 tbsp dried minced onions
1 pint sour cream
salt and pepper to taste

Steps:

  • boil potatos in skins til soft. Cool and grate with large grater mix with remaining ingredients bake in 9x13 pan at 350 for 35min or until light golden brown on top. Don't cover

Tips:

  • Choose the right potatoes: Russet potatoes are the best choice for this recipe, as they are starchy and will hold their shape well. You can also use Yukon Gold or red potatoes, but they may fall apart more easily.
  • Cut the potatoes evenly: This will help them cook evenly. If you have a mandoline, use it to slice the potatoes into thin, even slices. If you don't have a mandoline, use a sharp knife to cut the potatoes into 1/4-inch thick slices.
  • Soak the potatoes in cold water: This will help to remove some of the starch from the potatoes, which will prevent them from sticking together. Soak the potatoes for at least 30 minutes, or up to overnight.
  • Dry the potatoes thoroughly: Before you fry the potatoes, make sure they are completely dry. This will help them to crisp up. You can dry the potatoes with a paper towel or a salad spinner.
  • Use a well-seasoned cast iron skillet: A cast iron skillet will give the potatoes a nice, crispy crust. If you don't have a cast iron skillet, you can use a regular skillet, but make sure it is well-seasoned.
  • Don't overcrowd the skillet: When you fry the potatoes, don't overcrowd the skillet. This will prevent them from cooking evenly. Fry the potatoes in batches if necessary.
  • Cook the potatoes until they are golden brown and crispy: This will take about 5-7 minutes per side. Don't overcook the potatoes, or they will become dry and tough.
  • Season the potatoes with salt and pepper: Season the potatoes with salt and pepper to taste. You can also add other seasonings, such as garlic powder, onion powder, or paprika.
  • Serve the potatoes hot: Potato supreme is best served hot. You can serve it as a side dish or as a main course.

Conclusion:

Potato supreme is a delicious and easy-to-make dish that is perfect for any occasion. It is a great way to use up leftover potatoes, and it is also a great side dish for grilled meats or fish. With a few simple ingredients and a little bit of time, you can make a delicious and satisfying meal that the whole family will love.
