WARM POTATO SALAD WITH BEER AND MUSTARD DRESSING
Posting for ZWT6 German/Benelux region. Known as Kartoffelsalat, this side dish is popular throughout Germany. Use pale lager when preparing the salad, as a darker beer will discolor the potatoes. Recipe is from myrecipes.com.

ROASTED POTATO SALAD WITH BARBECUE DRESSING
If barbecue potato chips were a salad, then this would be it. It's hard to pick which component of this picnic dish is the greater star: the crispy roasted potatoes or the smoky, paprika-tinged barbecue sauce dressing. Bejeweled with crunchy red onions, which are soaked in water to mellow their bite, and showered with fresh dill, this colorful side dish is the savory crowd-pleaser you'll want to bring to any cookout or potluck.

Steps:
- Heat oven to 425 degrees. On a half sheet pan, toss the potatoes and tomatoes with the olive oil, ½ teaspoon salt and ½ teaspoon pepper, and spread in an even layer.
- Roast, stirring once halfway through, until the potatoes are golden brown and crispy, and the tomatoes have burst and shriveled, about 45 minutes.
- While the potatoes are roasting, fill a small bowl with cold tap water and add the red onions to soak and mellow out.
- In a large serving bowl, stir together the barbecue sauce, mayonnaise, lemon juice, honey, mustard, paprika, onion powder and ¼ teaspoon salt until smooth. When the potatoes and tomatoes are done roasting, let them cool for 5 minutes, then transfer to the bowl with the dressing. Drain the red onions and add half to the bowl. Gently toss to combine. Taste for seasoning, adding more salt and pepper as desired. Garnish with the remaining red onions and the fresh dill, and serve.
WHITE ALE POTATO SALAD
Take this one outside! My grown-up recipe uses beer instead of mayo, so you don't need to worry about keeping it cool. It's a really popular recipe on my blog, girllikestoeat.com. -Jenny MacBeth, Pittsburgh, Pennsylvania

Tips:
- Choose the right potatoes: Waxy potatoes, such as Yukon Gold or Red Bliss, hold their shape well in potato salad and don't get mushy.
- Boil the potatoes until they are just tender: Overcooked potatoes will fall apart in the salad.
- Cool the potatoes completely before adding them to the dressing: This will help to prevent the potatoes from absorbing too much dressing and becoming soggy.
- Use a flavorful dressing: The dressing is what really makes potato salad special. Experiment with different flavors, such as mayonnaise-based, mustard-based, or vinaigrette-based dressings.
- Add mix-ins to your potato salad: Mix-ins, such as chopped celery, hard-boiled eggs, or bacon, can add flavor and texture to potato salad.
- Serve potato salad chilled: Potato salad is best served chilled, so make it ahead of time and let it chill in the refrigerator for at least an hour before serving.
Conclusion:
Potato salad is a classic summer side dish that is perfect for potlucks, picnics, and barbecues. It is easy to make and can be tailored to your own taste by using different types of potatoes, dressings, and mix-ins. With a little planning, you can make a potato salad that everyone will love.
