1 1/2 lbs boneless pork loin chops (cut into small bite-size pieces)

2 onions, chopped
2 tablespoons fresh minced garlic (or to taste)
1 1/2 cups instant brown rice, uncooked
1 (10 ounce) can cream of chicken soup, undiluted
1 small jalapeno pepper, seeded and finely chopped (optional or to taste)
1 (15 ounce) can black beans, rinsed and drained
1 (14 ounce) can Rotel Tomatoes (or use diced tomatoes)
2 (4 ounce) cans green chili peppers
1/2 cup salsa
1/4 cup chicken broth or 1/4 cup water
1 1/2 tablespoons cumin (can use more)
2 cups shredded cheddar cheese, divided

1-1/2 pounds boneless pork, cut into 1/2-inch cubes
1 tablespoon canola oil
1 can (15 ounces) black beans, rinsed and drained
1 can (10-3/4 ounces) condensed cream of chicken soup, undiluted
1 can (14-1/2 ounces) diced tomatoes, undrained
2 cans (4 ounces each) chopped green chiles
1 cup quick-cooking brown rice
1/4 cup water
2 to 3 tablespoons salsa
1 teaspoon ground cumin
1/2 cup shredded cheddar cheese
Sliced jalapeno pepper, optional

1 (6 ounce) package dry instant long grain and wild rice mix
1 (8 ounce) container sour cream
1 (4 ounce) can chopped green chiles, drained
1 (16 ounce) package shredded Cheddar cheese

1 cup quick-cooking brown rice
