1 cup butter, softened
1/2 cup confectioners' sugar
1 teaspoon vanilla extract
2 cups all-purpose flour
1/4 teaspoon salt
1 cup finely chopped pistachios
1/2 cup seedless raspberry jam
Additional confectioners' sugar, optional

Steps:

  • Preheat oven to 325°. Cream butter and confectioners' sugar until light and fluffy. Beat in vanilla. In another bowl, whisk flour and salt; gradually beat into creamed mixture. Add pistachios; mix well., Shape dough into 1-in. balls. Place 1 in. apart on ungreased baking sheets. Press a deep indentation in center of each with your thumb; fill each with 1/2 teaspoon jam., Bake until bottoms are light brown, 13-16 minutes. Remove from pans to wire racks to cool. If desired, dust with additional confectioners' sugar.

1/3 cup confectioners' sugar
1 large egg
1 teaspoon vanilla extract
3/4 teaspoon almond extract
2 cups all-purpose flour
1 package (3.4 ounces) instant pistachio pudding mix
1/2 cup miniature chocolate chips
2 cups finely chopped pecans
FILLING:
2 tablespoons butter, softened
2 cups confectioners' sugar
1 teaspoon vanilla extract
2 to 3 tablespoons 2% milk
GLAZE:
1/2 cup semisweet chocolate chips
2 teaspoons shortening

Steps:

  • In a large bowl, cream butter and sugar until smooth and fluffy. Beat in egg and extracts. Combine flour and dry pudding mix; gradually add to creamed mixture and mix well. 1/2 cup powdered sugar
2 cups Gold Medal™ all-purpose flour
1/4 teaspoon salt
1 teaspoon vanilla
1 cup finely chopped roasted pistachio nuts
1 jar (12 oz) red raspberry jam
2 tablespoons powdered sugar

Steps:

  • Heat oven to 325°F. In large bowl, beat butter and 1/2 cup powdered sugar with electric mixer on medium speed until creamy. Stir in flour, salt, vanilla and nuts.
  • Shape dough into 1 1/4-inch balls. On ungreased cookie sheet, place balls about 1 inch apart. Press thumb into center of each cookie to make indentation, but do not press all the way to the cookie sheet.
  • Bake 15 to 17 minutes or until set but not browned. Quickly remake indentation with end of wooden spoon handle if necessary. Remove from cookie sheet to cooling rack; cool completely, about 30 minutes.

2 1/2 cups unbleached all-purpose flour
1/2 cup confectioners' sugar
1/2 teaspoon kosher salt
1 teaspoon ground cinnamon
1 teaspoon ground ginger
2 sticks unsalted butter, room temperature
1/4 cup pure maple syrup
1 teaspoon pure vanilla extract
1 cup unsalted shelled pistachios, coarsely ground
1/2 cup Maple Cream, for serving
Flaky sea salt, such as Maldon, for serving (optional)

Steps:

  • Preheat oven to 325 degrees, with racks in upper and lower thirds. In a bowl, whisk together flour, 1/4 cup confectioners' sugar, kosher salt, cinnamon, and ginger. Beat butter with remaining 1/4 cup confectioners' sugar on medium-high speed until light and fluffy, about 3 minutes. Beat in maple syrup and vanilla. Reduce speed to low; gradually beat in flour mixture to combine. Cover bowl; refrigerate until dough is firm but still pliable, about 1 hour (or tightly wrap in plastic and refrigerate up to 3 days).

1 egg
1 (3 1/2 ounce) package pistachio pudding mix
2 cups flour
1/2 cup mini chocolate chip
3/4-1 1/4 cup nuts, finely chopped
red food coloring
1 1/2 cups powdered sugar
2 tablespoons butter
1 teaspoon vanilla
1 -3 tablespoon milk
1/2 cup chocolate chips
2 teaspoons shortening

Steps:

  • Beat powdered sugar, butter, vanilla, almond extract, pudding mix and egg.
  • Add flour and chocolate chips. Mix well.

2 cups all-purpose flour
1/2 teaspoon baking powder
1/4 teaspoon salt
3/4 cup unsalted butter
3/4 cup granulated sugar
1 large egg
1 teaspoon vanilla
1 cup salted pistachios, finely chopped
*Crimson POM Jelly:
juice from 4-6 large POM Wonderful Pomegranates,** or 2 cups POM Wonderful 100% Pomegranate Juice
1/4 cup arils from 1 large POM Wonderful Pomegranate
2 tablespoons lemon juice
1 packet liquid fruit pectin or half of a 1 3/4-oz. package powdered fruit pectin
4 cups granulated sugar

Steps:

  • 1. Prepare Crimson POM Jelly in advance of making cookies.* 2. Preheat the oven to 350F. 3. In a medium bowl, whisk together the flour, baking powder and salt. 4. In a large bowl, beat the butter and sugar with an electric mixer until light and fluffy. Beat in egg and vanilla. On low speed, gradually add the flour mixture. 5. Put the pistachios in a shallow bowl. Shape heaping teaspoons of the dough into 1-inch balls and roll in pistachios, pressing to coat. Place about 2 inches apart on ungreased baking sheets. With your thumb, make a deep impression in the center of each cookie. Spoon teaspoon Crimson POM Jelly into each hollow. 6. Bake for 10 to 15 minutes or until golden brown around the edges. Cool cookies on cookie sheets for 3 minutes and then transfer to a wire rack. *Crimson POM Jelly: 1. Score 1 fresh pomegranate and place in a bowl of water. Break open the pomegranate under water to free the arils (seed sacs). The arils will sink to the bottom of the bowl and the membrane will float to the top. Sieve and put the arils in a separate bowl. Reserve cup of the arils from fruit and set aside. (Refrigerate or freeze remaining arils for another use.) 2. Prepare fresh pomegranate juice.** 3. In a 6-quart saucepan or Dutch oven, combine pomegranate juice, lemon juice and pectin. Over high heat, bring mixture to a boil. 4. Stir in sugar all at once, then stir constantly. Heat mixture again until it comes to a full rolling boil; boil 1 minute over medium-high heat. 5. Remove from heat and skim foam from jelly with a spoon. Discard foam. 6. Immediately ladle the jelly into clean jelly jars with lids or refrigerator containers with tight-fitting lids. Sprinkle reserved arils over the top of each container of jelly. Cover tightly. Let stand for 45 minutes to cool, then refrigerate for 1 hours. If not using immediately, refrigerate for up to 4 to 6 weeks or freeze for up to 1 year.
