¼ teaspoon olive oil
1 clove garlic, minced
¼ cup soy sauce
½ lemon, juiced
1 teaspoon honey
½ teaspoon olive oil
⅓ teaspoon packed brown sugar
¼ teaspoon sea salt, plus more for garnish
¼ teaspoon ground black pepper, plus more for garnish
¼ teaspoon red pepper flakes
4 (6 ounce) fillets salmon
1 tablespoon olive oil

Steps:

  • Heat 1/4 teaspoon olive oil in a small skillet over medium-high heat. Saute garlic in hot oil until just beginning to brown.
  • Mix sauteed garlic, soy sauce, lemon juice, honey, 1/2 teaspoon olive oil, brown sugar, sea salt, black pepper, and red pepper flakes together in a bowl; pour into a large resealable plastic bag. 2 red bell peppers, chopped

1 onion, sliced
6 tablespoons lemon juice

5 cloves garlic
1 ½ teaspoons salt

1/4 teaspoon garlic salt (approximate)
black pepper (freshly ground)
4 teaspoons raw sugar (Turbinado sugar preferred)
4 lemon wedges (optional)

Steps:

  • Preheat oven to 425°F.
  • Spray a 13x9 Pyrex dish with cooking spray.
  • Sprinkle salmon fillets, on both sides, lightly with garlic salt, and generously with freshly ground black pepper.
  • Place fillets (skin side down) in the Pyrex dish ~ top each fillet with about one teaspoon raw sugar.

5 large red peppers , halved and seeded
3 tbsp extra-virgin olive oil , plus extra for the peppers
4 salmon fillets , skin on
3 tbsp pine nut
500g pack small new potato
1 tbsp balsamic vinegar
85g marinated anchovy
2 tbsp caper , rinsed
20g pack basil , torn or shredded
2 handfuls rocket

Steps:

  • 1 Heat oven to 220C/200C fan/gas 7. Rub the peppers with a little oil, then place, skin side up, in a large roasting tin. Roast for 15 mins, then add the salmon to the tin, skin side down. Scatter over the pine nuts and return to the oven for 10 mins more.
  • Meanwhile, boil the potatoes in their skins for 8-10 mins until tender, then thickly slice or halve. Mix the oil and vinegar in a large bowl and add the anchovies and capers. When the peppers are cool enough to handle, strip off the skins and very thickly slice the flesh. Toss into the oil mixture with the basil and potatoes, adding any juice from the peppers, then pile onto a large platter with the rocket. Flake the salmon on top in chunky pieces and scatter with the pine nuts. Serve with crusty bread to mop up the juices.

2 red bell peppers and 1 yellow
2 pounds wild salmon, preferably cut as a long fillet, not steaks
3 tablespoons extra virgin olive oil
2 tablespoons capers, drained and rinsed in cold water if packed in vinegar OR if packed in salt, rinsed, soaked in cold water for 10 minutes, then rinsed again; if their size is much larger than nonpareils, cut them up a little bit
4 whole peeled garlic cloves
Fine sea salt
Black pepper ground fresh from the mill

Steps:

  • 1. Char the peppers, skin them, split them, and remove their core and seeds. Cut them into strips less than an inch wide and 1 1/2 -inch long. You can prepare the peppers early the same day that you are making the fish for dinner.
  • 2. Turn on the oven to 375°.
  • 3. Wash the fish in cold water and pat it dry with paper towels.
  • 4. Coat a baking dish with 2 tablespoons of olive oil. Lay the salmon down in the pan, skin side facing down if you have long fillets. 1 whole salmon , about 1.5-2kg/3lb 5oz-4lb 8oz, gutted
250ml dry white wine
3 tbsp white wine vinegar
1 small lemon , sliced
1 medium onion , sliced
1 carrot , chopped
2 bay leaves
2 sprigs each tarragon and thyme
½ tsp whole black peppercorns
2 red roasted peppers from a jar, finely chopped
1 shallot , finely chopped
5 tbsp olive oil
6 sprigs fresh basil
1 tbsp sherry or balsamic vinegar
100ml dry white wine

Steps:

  • Trim the salmon to fit into your largest roasting pan, removing the head and most of the tail. Weigh the fish and calculate the cooking time at 30 mins per kg/13 mins per lb. Wash any blood from the body cavity. Season well inside and place in the pan. Set aside.
  • Heat oven to 160C/fan 140C/gas 3. Make the court bouillon. Place all the ingredients into a pan with 11⁄2 litres cold water. Bring to the boil, then simmer for 20 mins. Strain the liquor over the fish, cover tightly with foil and cook in the oven for 45 mins-1 hr.
  • Meanwhile, make the sauce. Sauté the peppers and shallot in the oil for 5 mins. Strip the leaves from the basil and chop the stems. Add the stems to the pan along with the vinegar, wine and seasoning. Simmer for another 10 mins or so, then season to taste. Tear most of the basil into pieces and scatter over the sauce, then set aside to infuse.
  • Remove the fish from the oven, uncover but leave in the liquor for another 15 mins, then carefully lift from the pan onto a board. Peel off the skin and, using the back of a table knife, scrape away the brown flesh as neatly as possible. Slide the whole fish onto a platter. Spoon some of the sauce on top, sprinkle with the remaining basil and put the rest into a bowl to serve.
