4 pepperonis, divided
1 sesame bun, butter-toasted

Steps:

  • In a large bowl, combine the ground beef, garlic powder, onion powder, basil, rosemary, and thyme.
  • In a ramekin, spread two-thirds of the beef patty evenly along the bottom and sides.

1 tablespoon olive oil
1 clove garlic, grated
1 tablespoon tomato paste
1 teaspoon Italian seasoning
One 14-ounce can crushed tomatoes
1 pound ground beef

One pound store bought pizza dough, room temperature
8 ounces scamorza cheese, sliced
4 ounces thin pepperoni (about 32 slices)
1/4 cup olive oil, for brushing

Steps:

  • For the sauce: To a small saucepan over low heat add the oil and garlic and cook until fragrant. Add the tomato paste and seasoning, and mash with the back of a wooden spoon. Stir in the crushed tomatoes and bring to a simmer. Simmer for 15 minutes, then remove from the heat.
  • For the burger: Preheat grill to medium-high heat. Preheat oven to 550 degrees F with pizza stone on the middle rack of the oven.
  • Form the meat into four 4-ounce patties and sprinkle both sides with salt and pepper. Grill until medium, then remove from the heat and place on a paper-towel-lined plate.
  • Divide the pizza dough into four 4-ounce balls. Press out each ball on a floured pizza peel to about a 5-inch round. Top each with a slice of scamorza, a couple slices of pepperoni, then 1 burger patty and 1 tablespoon of pizza sauce. Fold the dough over the burger as if making a large dumpling. 2 lb lean (at least 80%) ground beef
1/2 teaspoon salt
1/4 cup chopped pepperoni (about 1 oz)
2 tablespoons sliced ripe olives
1/2 cup pizza sauce
6 slices (3/4 oz each) mozzarella cheese, cut in half diagonally
6 burger buns, split, toasted
6 leaves lettuce

Steps:

  • Heat gas or charcoal grill. In large bowl, mix ground beef and salt. Shape mixture into 12 thin patties, each about 4 inches in diameter.
  • In small bowl, mix pepperoni, olives and 1/3 cup of the pizza sauce. Spoon rounded tablespoon pepperoni mixture onto center of 6 patties; spread slightly. Top with remaining patties; press edges together firmly to seal.
  • Place patties on grill; cover grill. Cook with medium heat 8 to 12 minutes, turning once, until thermometer inserted in center of patties reads 160°F (avoid inserting in filling).
