PARMESAN-ROMANO MASHED POTATOES

Parmesan-Romano Mashed Potatoes image

My sister hates mashed potatoes, but for whatever reason likes my potatoes. She one night requested cheesey mashed potatoes, and this recipe was born out of what I had on hand, parmesan and romano! I added a whole lot more than cheese, and now she won't eat plain mashed potatoes!! Boiling the potatoes with the herbs allows the flavors to cook into the potato and blend together into a nice soft herb-y taste without being over powering. You don't have to use the herbs I do, just use what you have in the cupboard that you like! :-)

RANCH HOUSE CROCK POT PORK CHOPS W/ PARMESAN MASHED POTATOES

Ranch House Crock Pot Pork Chops W/ Parmesan Mashed Potatoes image

This is a hugely popular slow cooker recipe originating on Picky Palate's blog. By many who have made this, it's been suggested to add 2 cans of soup for additional gravy, but do NOT increase the Ranch Dressing Seasoning for it will become too intensely flavored. Many recipes are out there for roasting garlic. I simply put the cloves in a square of foil, drizzle with olive oil, seal and bake in a toaster oven for about 20 minutes or until soft and golden.

BAKED MASHED POTATOES WITH PARMESAN

Baked Mashed Potatoes With Parmesan image

The combination here of baked and mashed potatoes can be made in advance and reheated at serving time. A food mill or old-fashioned food ricer yields the best texture, but you can also mash the potatoes in any way you are accustomed. I like to use Idaho potatoes because they are less moist than many other types.

4 large Idaho potatoes, about 1 1/2 pounds
4 garlic cloves, peeled

1/2 teaspoon nutmeg, freshly grated
Freshly ground black pepper to taste
3 tablespoons grated Parmesan or other cheese

  • Place potatoes and garlic in a saucepan with water to cover. Add salt and bring to a boil. Simmer 15 to 20 minutes or until potatoes are tender. Drain and mash and place in a saucepan.
  • Preheat broiler.
  • Heat milk in a saucepan.
  • Add butter and nutmeg to milk. Stir with a wooden spatula until butter melts. Add milk gradually to the potatoes, stirring with a spatula. Add salt, if desired, and pepper.

SLOW COOKER MASHED RED POTATOES WITH PARMESAN

Slow Cooker Mashed Red Potatoes With Parmesan image

When there's no space on the stovetop to boil and mash potatoes, braise and mash them in a slow cooker - an easy and forgiving one-pot method. This rustic version has big flavors, thanks to the garlic that's cooked and smashed with the potatoes. The five garlic cloves lends a fairly assertive flavor, so decrease it to 2 or 3 cloves if you want a more subtle effect. You can leave the dish on warm for up to 3 hours after you mash the potatoes, just stir in the Parmesan and parsley right before serving.

Provided by Sarah DiGregorio

Categories     vegetables, side dish

Time 4h

Yield 8 to 10 servings

Number Of Ingredients 8

5 pounds red-skinned potatoes, cut into roughly 1-inch chunks
5 garlic cloves, peeled and smashed

2 teaspoons kosher salt, plus more for seasoning
Freshly ground black pepper
8 ounces Parmigiano-Reggiano, grated (about 2 1/4 cups)
Leaves of 1 small bunch flat-leaf parsley

Steps:

  • Toss together the potatoes, garlic, olive oil, juice of 1/4 the lemon (about 1 tablespoon), salt and a generous amount of black pepper in a 5- to 8-quart slow cooker. Cover and cook on high, stirring once or twice to encourage even cooking, until the potatoes are very tender, about 4 hours.
  • Coarsely mash the potatoes and garlic with a potato masher. Just before serving, fold in the Parmesan, parsley and remaining 1 tablespoon lemon juice. Taste for seasoning and add more salt and pepper if necessary.

Tips

  • For the best results, use Yukon Gold or russet potatoes. These varieties have a high starch content, which will make your mashed potatoes creamy and smooth.
  • Peel and cube the potatoes before boiling them. This will help them cook evenly.
  • Don't overcook the potatoes. They should be tender but still hold their shape.
  • Drain the potatoes well before mashing them. Any excess water will make your mashed potatoes watery.
  • Use a potato ricer or food mill to get the smoothest mashed potatoes.
  • Add the butter, milk, and Parmesan cheese while the potatoes are still hot. This will help them melt and incorporate evenly.
  • Season the mashed potatoes with salt, pepper, and garlic powder to taste.
  • Garnish the mashed potatoes with additional Parmesan cheese, chopped fresh parsley, or chives.

Conclusion

Parmesan mashed potatoes are a delicious and easy-to-make side dish that is perfect for any occasion. They are creamy, cheesy, and packed with flavor. With just a few simple ingredients and a few minutes of your time, you can create a dish that your family and friends will love.
