Provided by Ina Garten

Categories     main-dish

Time 3h15m

Yield 6 servings

Number Of Ingredients 14

5 pounds very meaty bone-in beef short ribs, cut into 2-inch chunks
Good olive oil
Kosher salt and freshly ground black pepper
3 cups chopped leeks, white and light green parts (3 leeks)
3 cups chopped celery (5 to 6 ribs)
2 cups chopped yellow onions (2 onions)
2 cups chopped unpeeled carrots (6 carrots)
1 1/2 tablespoons minced garlic (5 cloves)
1 (750-milliliter) bottle Burgundy, Cotes du Rhone, Chianti, or other dry red wine
4 cups beef stock, preferably homemade or College Inn
1 cup canned crushed tomatoes, such as San Marzano
1 (11.2-ounce) bottle Guinness draught stout
6 sprigs fresh thyme, tied with kitchen string
Toasted baguette, for serving

Steps:

  • Preheat the oven to 425 degrees F. Place the short ribs on a sheet pan, brush the tops with olive oil, and sprinkle with 1 1/2 tablespoons salt and 1 1/2 teaspoons pepper. Roast for 20 minutes and remove from the oven. Reduce the temperature to 325 degrees F.
  • Meanwhile, heat 1/4 cup olive oil in a large (12-inch) Dutch oven, such as Le Creuset, over medium heat. Add the leeks, celery, onions, and carrots and cook over medium to medium-high heat for 20 minutes, stirring occasionally. Add the garlic and cook for one minute. Add the wine, bring to a boil, lower the heat, and simmer over medium heat for 10 minutes, until the liquid is reduced. Add the stock, tomatoes, Guinness, thyme, 1 tablespoon salt, and 1 1/2 teaspoons pepper.
  • Place the ribs in the pot, along with the juices and seasonings from the sheet pan. Bring to a boil, cover, and cook in the oven for one hour. Uncover and cook for one more hour, until the meat is very tender.
  • Remove the short ribs to a plate with a slotted spoon and discard the thyme bundle and any bones that have separated from the meat. Simmer the sauce on the stove for 20 minutes, until reduced. Skim some of the fat off the top and discard. Return the ribs to the pot, heat for 5 minutes, and taste for seasonings. Serve hot in shallow bowls, with a toasted baguette and extra sauce on the side.

6 bone-in beef short ribs (about 5 3/4 pounds)
kosher salt
extra virgin olive oil
1 large Spanish onion, cut into 1/2-inch pieces
2 celery ribs, cut into 1/2-inch pieces
2 carrots, peeled, cut in 1/2 lengthwise, then cut into 1/2-inch pieces

1 1/2 cups tomato paste
2 -3 cups hearty red wine

2 bay leaves

Steps:

  • Season each short rib generously with salt. Coat a pot large enough to accommodate all the meat and vegetables with olive oil and bring to a high heat.

  • Preheat the oven to 375 degrees F.

  • When the short ribs are very brown on all sides, remove them from the pan.
  • Drain the fat, coat the bottom of same pan with fresh oil and add the pureed vegetables.
  • Season the vegetables generously with salt and brown until they are very dark and a crud has formed on the bottom of the pan, approximately 5 to 7 minutes.
  • Scrape the crud and let it reform.
  • Scrape the crud again and add the tomato paste.
  • Brown the tomato paste for 4 to 5 minutes.
  • Add the wine and scrape the bottom of the pan.
  • Lower the heat if things start to burn. Reduce the mixture by half.
  • Return the short ribs to the pan and add 2 cups water or until the water has just about covered the meat.
  • Add the thyme bundle and bay leaves.
  • Cover the pan and place in the preheated oven for 3 hours.
  • Check periodically during the cooking process and add more water, if needed.
  • Turn the ribs over halfway through the cooking time.
  • Remove the lid during the last 20 minutes of cooking to let things get nice and brown and to let the sauce reduce. When done the meat should be very tender but not falling apart.
  • Serve with the braising liquid.

BRAISED SHORT RIBS BY PIONEER WOMAN

Braised Short Ribs by Pioneer Woman image

I have just discovered Pioneer Woman and she sure knows how to please meat lovers. I tried this recipe the other night and "fantastic" just doesn't do it justice.

Provided by rocket_j_dawg

Categories     Cheese

Time 2h20m

Yield 4 serving(s)

Number Of Ingredients 12

8 whole beef short ribs
1 dash kosher salt, & pepper to taste
1/4 cup all-purpose flour
6 pieces pancetta, Diced
2 tablespoons olive oil
1 whole medium onion, Diced
3 whole carrots, Diced
2 whole shallots, Peeled And Finely Minced
2 cups red wine
2 cups beef broth (enough To Almost Cover Ribs)
2 sprigs thyme
2 sprigs rosemary

Steps:

  • Salt and pepper ribs, then dredge in flour. Set aside.
  • In a large dutch oven, cook pancetta over medium heat until complete crispy and all fat is rendered. Remove pancetta and set aside. Do not discard grease.
  • Add olive oil to pan with the pancetta grease, and raise heat to high. Brown ribs on all sides, about 45 seconds per side. Remove ribs and set aside. Turn heat to medium.
  • Add onions, carrots, and shallots to pan and cook for 2 minutes. Pour in wine and scrape bottom of pan to release all the flavorful bits of glory. Bring to a boil and cook 2 minutes.
  • Add broth, 1 teaspoon kosher salt, and plenty of freshly ground black pepper. Taste and add more salt if needed. Add ribs to the liquid; they should be almost completely submerged. Add thyme and rosemary sprigs (whole) to the liquid.
  • Put on the lid and place into the oven. Cook at 350 for 2 hours, then reduce heat to 325 and cook for an additional 30 to 45 minutes. Ribs should be fork-tender and falling off the bone. Remove pan from oven and allow to sit for at least 20 minutes, lid on, before serving. At the last minute, skim fat off the top of the liquid. (Can also refrigerate mixture, then remove solid fat from the top.).
  • Serve 2 ribs on bed of creamy polenta, spooning a little juice over the top.

Tips:

  • Choosing the Best Short Ribs: Opt for short ribs that are well-marbled with fat, as this will contribute to their richness and flavor during braising.
  • Preparing the Short Ribs: Before braising, season the short ribs liberally with salt and pepper to enhance their natural flavors. Additionally, consider browning them in a skillet over medium-high heat to develop a delicious crust.
  • Selecting Quality Ingredients: Use high-quality ingredients like a robust red wine (such as Chianti), flavorful chicken broth, and aromatic vegetables to create a rich and flavorful braising liquid.
  • Braising Time and Technique: Allow ample time for the short ribs to braise, as this low and slow cooking method tenderizes the meat and infuses it with the braising liquid's flavors. Maintain a gentle simmer throughout the braising process to prevent the liquid from reducing too quickly.
  • Enhancing the Sauce: Reduce the braising liquid after cooking to concentrate its flavors and create a rich, flavorful sauce. You can also add a touch of butter or cornstarch slurry to thicken the sauce if desired.

Conclusion:

Olive Garden's Chianti Braised Short Ribs offer a delightful combination of tender, flavorful meat and a rich, aromatic sauce. By following the tips and techniques outlined in the recipe, you can recreate this classic dish at home and enjoy a restaurant-quality meal in the comfort of your own kitchen. Remember to choose high-quality ingredients, braise the short ribs low and slow, and enhance the sauce with a reduction or thickener for a truly satisfying and memorable dining experience.
