This pie has a meringue, but don't let that scare you it is super easy. I made it both ways, with the vanilla and the bourbon both were great! Courtesy of Paula Deen.

1 1/4 c sugar
1 Tbsp flour
1/2 tsp salt
1/2 tsp ground nutmeg
1/2 tsp ground ginger
1/2 tsp ground cinnamon
1/8 tsp ground cloves

2 can(s) evaporated milk (12 oz)
2/3 c whole milk
2 9 " pie crust

  • 1. Combine sweet potatoes and butter, mix well. Add sugar, flour and spices, mix well again. Blend in eggs and milks, mix well again. Pour evenly into two 9" pie shells. Bake at 425 degrees F. Oven for 10 minutes. Reduce oven temperature to 350 degrees and cook for 1 hour.
  • 2. NOTE: I FIND IT HELPS TO FILL THE PIE SHELLS AFTER THEY ARE ON OVEN RACK WITH A LADLE, DIPPER ETC. IT HELPS PREVENT SPILLING.

Tips:

  • Use a baking sheet with sides. This will help to prevent the sweet potatoes from rolling around and burning.
  • Prick the sweet potatoes with a fork. This will help them to cook evenly.
  • Bake the sweet potatoes at a high temperature. This will help to caramelize the sugars in the potatoes and give them a crispy exterior.
  • Add some butter, salt, and pepper to the sweet potatoes before baking. This will help to enhance their flavor.
  • Serve the sweet potatoes with your favorite toppings. Some popular options include butter, sour cream, marshmallows, and nuts.
