6 medium potatoes
2/3 cup mayonnaise
1/2 cup plain yogurt
2 tablespoons cider vinegar
2 teaspoons prepared mustard
1 garlic clove, minced

5 bacon strips, cooked and crumbled
1 medium onion, grated
2 medium Golden Delicious apples, cubed

Steps:

  • Place potatoes in a large saucepan and cover with water. Bring to a boil. Reduce heat; cover and cook for 15-20 minutes or until tender. Drain. Meanwhile, in a small bowl, combine the mayonnaise, yogurt, vinegar, mustard, garlic and salt. , Peel warm potatoes and slice into a large bowl; add the bacon and onion. salt and black pepper
6 stalks celery, sliced
1 small red onion, very finely sliced
2 red apples, such as red delicious, cored and diced
1/2 cup mayonnaise
2 tablespoons snipped fresh chives (to garnish)
6 tablespoons olive oil
2 tablespoons white vinegar
1 tablespoon lemon juice
1 tablespoon Dijon mustard
1/4 teaspoon sugar
salt and pepper
