Steps:
- Preheat oven to 325 degrees F.
- Dice the butter and put into a food processor with the flour, and sugar. Pulse in short intervals until the mixture is crumbly and resembles coarse bread crumbs. Add the cold egg yolk, salt and water to the mixture, this will make a pastry dough. Place the dough onto a floured surface and form into a ball. Wrap in plastic and place in the refrigerator until cold.
- When the dough is cold, place on a floured surface and roll out to cover the bottom of a 13 by 9-inch pan. Bake for 20 minutes.
- Whisk eggs together and set aside.
- In a separate bowl mix the sugar, flour and baking powder together. Add the lemon zest and juice. Mix in the eggs until well combined. Pour the mixture over the par baked crust.
- Place in the oven and bake for 30 minutes until the center has set firmly. Remove from the oven and allow it to cool. Cut into bars.
- In a large bowl, mix all ingredients together and blend with a hand mixer on low until creamy. Pipe frosting onto lemon bars.
NEELY'S DRY BBQ RIBS
Steps:
- Trim the spare ribs, removing the upper brisket bone and any excess fat; this will produce a St. Louis-style rib. Rinse the ribs and season with Neely's Seasoning, and then cover and refrigerate for 4 to 12 hours.
- Indirect cooking in a barbecue pit is recommended to prevent burning. Cook at 250 degrees F (curled side of ribs facing up) for the first 3 hours, and then increase the temperature to 300 degrees F for the final 3 hours. Sprinkle the ribs with Neely's Seasoning Mix during the last 30 minutes of cooking.
- Mix all ingredients together in a bowl.
LIME BARS
A different take on the lemon bars we all love. I actually prefer them to lemon. This is my favorite bar cookie and I'm asked to bring it when going to a potluck or picnic. The recipe says it serves 36, but you can't eat just one of these delicious, tangy lime bars. You can omit the glaze and sprinkle with powdered sugar if that's your preference.

Tips:
- Make sure your butter is at room temperature before you start baking. This will help the ingredients mix together more easily and result in a smoother batter. You can soften the butter in the microwave for a few seconds or let it sit on the counter for about 30 minutes.
- Don't overmix the batter. Overmixing can make the bars tough, so be careful not to mix them for more than a minute or two after all the ingredients have been added.
- If you don't have a 9x13 inch baking pan, you can use a 10x15 inch pan instead. Just adjust the baking time accordingly (increase it by about 5 minutes).
- The bars are best when chilled for at least 3 hours before serving. This will help them set up and become more firm.
- You can store the bars in an airtight container in the refrigerator for up to 3 days, or in the freezer for up to 2 months.
Conclusion:
Neelys' Lime Bars are a delicious and refreshing treat that are perfect for any occasion. They're easy to make and can be made ahead of time, which makes them a great option for busy weeknights or potlucks. With their bright citrus flavor and creamy filling, these bars are sure to be a hit with everyone who tries them.
