LAMB CHOPS WITH MUSTARD-MOLASSES GLAZE

Lamb Chops With Mustard-Molasses Glaze image

DH and I made these lamb chops from my Bobby Flay "Boy Meets Grill" cookbook. We liked how fast and easy they were, requiring minimal prep. We used lamb loin chops. DH said next time we will use rib chops as he didn't think the loin chops needed all of the dressing up, though he agreed the glaze was very nice.

Tips:

  • Choose high-quality lamb chops: Look for chops that are evenly marbled with fat and have a bright red color. Avoid chops that are brown or gray.
  • Marinate the lamb chops for at least 30 minutes: This will help to tenderize the meat and infuse it with flavor. You can use a simple marinade made with olive oil, herbs, and spices, or you can try a more complex marinade that includes wine or yogurt.
  • Cook the lamb chops over medium-high heat: This will help to create a nice crust on the outside of the chops while keeping the inside tender and juicy.
  • Do not overcook the lamb chops: Lamb chops are best cooked to medium-rare or medium. Overcooked lamb chops will be tough and dry.
  • Let the lamb chops rest before serving: This will allow the juices to redistribute throughout the meat, resulting in more tender and flavorful chops.

Conclusion:

Mustard-glazed lamb chops are a delicious and elegant dish that is perfect for a special occasion. The mustard glaze adds a tangy and savory flavor to the chops, while the lamb itself is tender and juicy. These chops are sure to impress your guests, and they are surprisingly easy to make. So next time you are looking for a new and exciting way to cook lamb, give this recipe a try. You won't be disappointed!
