2 medium potatoes, peeled and cut in small chunks and boiled for 20 minutes
2 medium tomatoes, diced
1 large onion, chopped
1 piece ginger, crushed and minced
5 cloves garlic, minced
1 -4 teaspoon mrcurrys.com instant curry, seasoning powder
3 tablespoons oil

Steps:

  • Heat oil and cook onions, stirring, for about 4 minutes.
  • Add 1-4 teaspoons MrCurrys.
  • com Instant Curry Seasoning Powder (depending on how spicy you want it. I used 3 and it was tasty and pleasantly spicy but not at all uncomfortable).
  • Also add garlic& ginger and stir mixture for about 30 seconds.
  • Add tomato, salt as needed (I added 1/2 teaspoon) and cook& stir for 5 minutes.
  • Add cooked, drained potato pieces and gently stir for another 4 minutes.
  • Serve.

2 lb potato, peeled and cubed
15 oz chickpeas, 1 can, drained
1 cup vegetable broth
1 tablespoon lemon juice
14 oz diced tomato, 1 can
14 oz coconut milk, 1 can
rice, cooked, for serving
naan bread, for serving
fresh cilantro, chopped, for garnish

400 g potatoes, in chunks
50 g roasted peanuts, crushed
1 large onion, chopped
5 tablespoons water
75 g brown sugar
2 teaspoons salt
3 cardamom pods
1 teaspoon coriander seed
1 teaspoon cumin seed
2 cloves
6 small red chilies
2 garlic cloves, halved
1 teaspoon ground cinnamon
1/2 inch gingerroot, peeled and chopped
2 shallots, chopped
1 stalk lemongrass, chopped
1/2 lime, juice of

  • First make the paste. Crack the cardamom pods and remove the seeds. Dry fry the seeds with the cumin, cloves and coriander for 2 minutes Place these in a processor and grind, add all the other paste ingredients and process until they come together as a paste.

2 tbsp vegetable or sunflower oil
1 tbsp brown or black mustard seeds
3 long dried red Indian chillies
12-15 curry leaves
2 onions , sliced
2 tsp ground coriander
2 tsp garam masala
2 tsp turmeric
500g tomatoes , quartered
800g potatoes , peeled and cut into very large chunks
400g can coconut milk
chapatis, rotis or naan bread , to serve
150g pot natural yogurt
zest and juice 1 lime
½ cucumber , deseeded and coarsely grated
small handful coriander leaves, roughly chopped

Steps:

  • Heat the oil in a large pan and fry the mustard seeds, chillies and curry leaves until the seeds start to pop. Add the onions and fry until softened and starting to brown. stir in the spices, add the tomatoes and fry for 5 mins. Add the potatoes and stir to coat. Pour in the coconut milk with 200ml water. Bring to the boil and simmer for 20-25 mins, stirring occasionally, until the potatoes are just tender.
  • To make the raita, mix all the ingredients together with some seasoning.
  • If the curry looks a little too saucy, scoop out the potatoes with a slotted spoon into another dish, then boil the sauce until reduced a little. stir the potatoes back in to heat through, and season well (this curry needs a good sprinkling of salt). serve with warmed Indian bread and a dollop of raita.
