Baked Beans from Scratch image

Old Fashioned recipe for Baked Beans are made from scratch with a sweet and savory maple sauce.

Provided by Kristen Chidsey

Categories     Side Dish

Time 4h10m

Number Of Ingredients 12

1 1/3 cups dried navy beans (soaked overnnight )
3 slices thick nitrate free bacon (chopped)
1/4 cup onion (chopped)
1/2 cup tomato sauce (or ketchup)
1/4 cup molasses
1/4 cup brown sugar (use up to 1/2 cup if you like REALLY sweet beans)
1/4 cup pure maple syrup
1 teaspoon kosher salt
2 teaspoons dry mustard
1 tablespoon apple cider vinegar
1/2 cup apple juice (or water)
1/2 cup water

Steps:

  • Place dried beans in a container that can be fitted with a lid. Pour fresh water over beans until the water is at least 1 inch above beans. Seal container shut. Soak beans for 8-12 hours.
  • After soaking, drain beans. Add soaked beans to a large stock pan. Cover beans by 1 inch with fresh cold water.
  • Bring water to a rapid boil, and reduce to a simmer. Simmer for 1 hour. Drain cooked beans well.
  • After soaking the beans, you can speed up the process by cooking the soaked beans in the Instant Pot.
  • Preheat oven to 300 degrees.
  • Heat a large skillet over medium-high heat.
  • Add in the sliced bacon. Cook until bacon begins to render fat and then stir in the chopped onion. Saute bacon and onions together until onions begin to soften and bacon is browned and slightly crisp. This should take about 5-6 minutes. Drain off excess fat off bacon.
  • Mix together tomato sauce, brown sugar, molasses, maple syrup, dried mustard, vinegar, apple juice, water, and salt together. Add in bacon and onion mixture and cooked beans and gently stir to combine.
  • Pour bean mixture into a 2-quart oven-safe dish. Beans should be pretty well submerged in liquid and mixture should be relatively loose. If there does not seem to be enough liquid in the baking dish, add up to 1/2 cup additional water or juice. Cover pan with foil or oven-safe lid.
  • Bake covered for 2 hours. Uncover and bake for another 30-40 minutes, until thickened.

Provided by Trish - Mom On Timeout

Categories     Side Dish

Number Of Ingredients 10

16 oz dried navy beans (any small white bean will work)
1 med onion (diced)
1/2 cup dark brown sugar (firmly packed)
1/3 cup molasses
1/4 cup apple cider vinegar
2 tsp dry mustard
5 cups water
1/4 to 1/2 tsp freshly ground black pepper
salt and pepper (to taste)
1/2 lb bacon (cooked, drained, and cut into small pieces or crumbled - OPTIONAL)

Steps:

  • Rinse and pick through beans thoroughly. (You want to pick out any bad beans that are cracked, darker then the rest, has holes or is shriveled. Also keep an eye out for small rocks - I rarely see these but I know it can happen.)
  • Combine beans, onion, dark brown sugar, molasses, apple cider vinegar, mustard, water, and black pepper in a 6 quart slow cooker. (Bacon gets added here if you are using.)
  • Stir just until ingredients are combined. Cover and cook on low until the beans are tender, about 12 hours.
  • Stir in salt to taste and additional pepper if desired. Start with half a teaspoon and go from there.
  • Turn slow cooker to warm until ready to serve.

MOM'S FAMOUS NEW ENGLAND BAKED BEANS

Mom's Famous New England Baked Beans image

My mom has made these beans for every family gathering I can remember. It's gotten to the point that she has to make two batches because one just doesn't cut it. The beans take a long time to make, but the way they make the house smell as they bake makes it worth it! NOTE: Prep time does not include soaking the beans.

Time 4h30m

Yield 6-8 serving(s)

Number Of Ingredients 10

1 (16 ounce) bag navy beans
1/4 lb bacon (uncooked, cut into small pieces)
1/2 onion (chopped)
1 1/2 cups brown sugar
1/2 cup ketchup
1/4 cup molasses
1/4 cup maple syrup
2 teaspoons dry mustard
1 teaspoon salt
3 cups water

Steps:

  • Soak the beans in a pan of water overnight then drain before cooking.
  • Boil the soaked beans until the skins crack when you blow on them. (With a spoon lift some out of the water and blow on them. If the skins crackle, they are done). This step is important because the beans don't really soften up any more while baking and you don't want them to be too hard.
  • Drain beans and place them in bean pot. (We use a ceramic pot with a tight lid).
  • In a saue pan, bring the rest of the ingredients to a boil.
  • Once everything is melted and mixed, poor the mixture over the beans in the pot.
  • Make sure the liquid covers the beans. If it doesn't add more water.
  • Bake in covered pot at 250 for about 4 hours. Check periodically to make sure the liquid level doesn't get too low. The liquid will thicken as the beans bake but you should have a little juice so they are not too dry.
