Time 2h40m

Number Of Ingredients 15

6 oz white chocolate (chopped (or white chocolate chips))
2 cups milk
3 1/3 cups all-purpose flour
1 Tbsp baking powder
3/4 tsp salt
1 cup unsalted butter (room temperature)
2 cups granulated sugar
4 large eggs (room temperature)
2 tsp vanilla
6 large egg whites
2 cups granulated sugar
2 cups unsalted butter (room temperature)
8 oz white chocolate (chopped, melted, cooled)
500 g fresh raspberries (divided)
6 Tbsp raspberry jam (seeded or seedless (optional))

Steps:

  • Heat milk and chocolate until melted and combined, cool to room temperature.*
  • Preheat oven to 350F. Grease and flour three 8" cake rounds and line with parchment.
  • In a medium bowl, whisk flour, baking powder, and salt until well combined. Set aside.
  • Using a stand mixer fitted with a paddle attachment, cream butter and sugar on med-high until pale and fluffy (approx 3mins). Reduce speed and add eggs one at a time fully incorporating after each addition. Add vanilla.
  • Alternate adding flour mixture and milk mixture, beginning and ending with flour (4 additions of flour and 3 of milk). Fully incorporating after each addition.
  • Bake for approx. 40mins or until a toothpick inserted into the center comes out mostly clean.
  • Place cakes on wire rack to cool for 10mins then turn out onto wire rack and cool completely.
  • Place egg whites and sugar into the bowl of a stand mixer, whisk until combined.**
  • Place bowl over a double boiler on the stove and whisk constantly until the mixture is hot and no longer grainy to the touch (approx. 3mins). Or registers 160F on a candy thermometer.
  • Place bowl on your stand mixer and whisk on med-high until the meringue is stiff and cooled (the bowl is no longer warm to the touch (approx. 5-10mins)).
  • Switch to paddle attachment. Slowly add cubed butter and mix until smooth.***
  • Add white chocolate and whip until smooth.
  • Reserve 1/3rd of the prettiest raspberries (160g) for the top of the cake. Very roughly chop remaining 2/3rds of the raspberries (330g). I basically just made sure each was cut in half.
  • Place one layer of cake on a cake stand or serving plate. Spread approx. 3 Tbsp of raspberry jam evenly across the layer, right to the edges. Top with 1 cup of buttercream and spread evenly. Press half of the chopped raspberries evenly into the frosting. Repeat with next layer.
  • Top with final layer of cake and crumb coat. Add 1 cup of buttercream to the very top and smooth until it hangs over the sides. Use an icing smoother to smooth the sides and create a lip on the top with the frosting.
  • Dollop a bit of frosting on the top and spread out in a rustic manner. Top with fresh raspberries and thyme sprigs if desired.

WHITE CHOCOLATE CAKE

White chocolate cake image

If you're celebrating a special occasion, this layer cake makes a great centrepiece. It's topped with silky white chocolate ganache and fresh raspberries

Provided by Liberty Mendez

Categories     Dessert

Time 1h25m

Yield Serves 16-18

Number Of Ingredients 11

300g butter, softened, plus extra for the tins
300g caster sugar
5 large eggs, beaten
1 tsp vanilla bean paste
1 tsp baking powder
300g self-raising flour
100g white chocolate, finely chopped
350g fresh raspberries, halved
450g white chocolate, finely chopped
200ml double cream
1 tbsp vanilla paste

Steps:

  • Heat the oven to 180C/160C fan/gas 4. Butter three 18cm sandwich cake tins and line with baking parchment. Beat together the butter, sugar, eggs, vanilla, baking powder and flour using a stand mixer or electric hand whisk until you have a fluffy mixture, about 5 mins. Fold in the white chocolate until it's well distributed throughout.
  • Divide the mixture evenly between the tins and level out using a palette knife or the back of a spoon until smooth. Bake for 25-30 mins until a skewer inserted into the middle comes out clean. Remove from the oven and leave the sponges to cool in the tins for 10 mins, then remove from the tins and transfer to a cooling rack, top side down, and leave to cool completely. If the sponges are not level use a serrated knife to cut away the peaks.
  • While the sponges are cooling, make the ganache. Put the white chocolate in a large bowl. Pour the cream into a saucepan over a medium heat and bring to a simmer. Immediately pour the cream over the chocolate and leave to stand for 4-5 mins until the chocolate has melted. Mix together to form a smooth ganache, ensuring all the chocolate has fully melted, then mix in the vanilla. Chill in the fridge for 30 mins, stirring occasionally so it doesn't completely harden, until spreadable and thick enough to coat the cake.
  • Once the sponges are cool and the ganache has set to a spreadable consistency, you can construct the cake. Place one sponge on a serving plate, spread over a thin layer of the chocolate ganache, then fill the middle with a third of the raspberries. Place another sponge on top and repeat with a layer of ganache and another third of raspberries. Put the final sponge on top and gently coat the whole cake with a thin layer of ganache. Leave in the fridge to set for at least 20 mins. To finish, spread over any remaining ganache and top with the remaining raspberries. Will keep chilled for up to three days in an airtight container.

Tips:

  • Mise en Place: Before you start baking, measure and prepare all your ingredients and equipment. This will help you stay organized and prevent any mishaps.
  • Room Temperature Ingredients: For the best results, make sure your butter, eggs, and milk are at room temperature before you start baking. This will help them mix together more easily and create a smoother batter.
  • Creaming the Butter and Sugar: When creaming the butter and sugar together, make sure you do so until the mixture is light and fluffy. This will help incorporate air into the batter, resulting in a lighter and more tender cake.
  • Adding the Eggs: Add the eggs one at a time, beating well after each addition. This will help prevent the batter from curdling.
  • Mixing the Dry Ingredients: In a separate bowl, whisk together the flour, baking powder, and salt. This will help ensure that these ingredients are evenly distributed throughout the batter.
  • Alternating Wet and Dry Ingredients: When adding the dry ingredients to the wet ingredients, do so in three additions, alternating with milk. This will help prevent the batter from becoming too dry or lumpy.
  • Baking the Cake: Bake the cake in a preheated oven until a toothpick inserted into the center comes out clean. The baking time will vary depending on the size and shape of your cake pan.
  • Making the Buttercream: To make the buttercream, beat the butter until light and fluffy. Gradually add the powdered sugar, milk, and vanilla extract, beating until smooth and creamy.
  • Decorating the Cake: Once the cake is cool, you can decorate it with the buttercream. You can also add fresh berries, sprinkles, or other decorations of your choice.

Conclusion:

With these tips in mind, you're sure to create a delicious and beautiful mixed berry and white chocolate buttercream cake that will be a hit with your family and friends. This cake is perfect for any occasion, from birthdays to anniversaries to simple gatherings. So next time you're looking for a sweet treat, give this recipe a try!
