1/4 cup Gold Medal™ all-purpose flour
Generous 1/4 teaspoon baking powder
Pinch salt
Pinch ground ginger
Pinch ground cinnamon
Pinch ground nutmeg
1 egg white
2 tablespoons packed light brown sugar
2 tablespoons canola oil
1 1/2 teaspoons milk
1/4 teaspoon vanilla
1/3 cup packed shredded carrot (about 1 carrot)
1 tablespoon raisins
1 tablespoon chopped walnuts
2 oz cream cheese, softened
1 tablespoon unsalted butter, softened
1/3 cup powdered sugar, sifted
2 teaspoons real maple syrup
1 tablespoon chopped walnuts, toasted, finely chopped (for garnish)

Steps:

  • Heat panini maker to 350°F (make sure panini maker sits flat on your work surface). Spray 2 (6-oz) individual baking dishes (ramekins) with cooking spray.
  • In small bowl, stir together flour, baking powder, salt, ginger, cinnamon and nutmeg; set aside. In medium bowl, beat egg white, brown sugar, oil, milk and vanilla with wire whisk until blended. Stir in flour mixture until combined; stir in carrots, raisins and walnuts.

If necessary, level cake layers with a serrated knife.

Tips:

  • Mise en Place: Before you start baking, measure and prepare all of your ingredients. This will help you stay organized and ensure that you don't miss anything.
  • Use Fresh Carrots: Fresh carrots will give your cakes the best flavor and texture. If you can't find fresh carrots, you can use frozen carrots that have been thawed and drained.
  • Grate the Carrots Finely: Finely grating the carrots will help them distribute evenly throughout the batter and give the cakes a smooth texture.
  • Don't Overmix the Batter: Overmixing the batter will make the cakes tough. Mix just until the ingredients are combined.
  • Use a Springform Pan: A springform pan will make it easy to remove the cakes from the pan without breaking them.
  • Cool the Cakes Completely: Allow the cakes to cool completely before frosting them. This will help the frosting set properly.
  • Make the Cream Cheese Glaze Ahead of Time: The cream cheese glaze can be made ahead of time and stored in the refrigerator. This will save you time when you're ready to frost the cakes.

Conclusion:

These mini carrot cakes are a delicious and easy-to-make treat that is perfect for any occasion. They're moist, flavorful, and topped with a creamy cream cheese glaze that is simply irresistible.
