1/3 cup sugar
1 (6 ounce) box strawberry Jell-O gelatin dessert, the big guy
12 marshmallows, large
2 cups cottage cheese, small curd
2 cups Cool Whip or 1 cup cream, whipped

Steps:

  • Add water to liquid from pineapple to make 2 cups liquid.
  • Combine with sugar and bring to a boil.
  • Dissolve Jell-O and marshmallows in boiling liquid.
  • Chill until partially set.

1 (3 ounce) package lime gelatin
1 (8 1/4 ounce) can crushed pineapple, drained (reserve syrup)

mayonnaise

Steps:

3 large eggs, cookd
1 (3 ounce) can pitted olives, quartered
2 large celery, stalks diced
1 (8 ounce) container sour cream
1/2 cup mayonnaise
pepper
1/4 cup milk
2 tablespoons lemon juice
1 tablespoon minced fresh tarragon or 1 teaspoon dried tarragon
2 teaspoons salt
tomatoes, wedges

Steps:

  • In large bowl, mix sour cream, mayonnaise, milk, lemon juice, tarragon, salt and pepper. Gently stir in potatoes, eggs, celery and olives. Line a 2 1/2 quart bowl with plastic wrap. Spoon salad into bowl, packing well. Cover and refrigerate about 3 hours. To serve, invert on a plate and decorate with tomato wedges.

250g raisins
375g currants
100ml brandy
zest of 1 lemon, juice of ½
300g shredded suet
250g dark brown sugar
85g chopped mixed peel
½ small nutmeg, grated
1 large Bramley apple, peeled and grated

Steps:

  • Soak the raisins and currants in the brandy and lemon juice for 1 hr until plumped up, then drain and set the brandy aside. Mix all the ingredients together in the order given, then pour in the brandy when everything else is well mixed. Spoon and press into sterilised jars, to exclude any air (the easiest way to sterilise jars is to run them through a dishwasher on its hottest setting). Cover and leave for at least a fortnight. Will keep in the fridge for up to 6 months.

1 large orange
1 small lemon
1 (15 ounce) box seedless raisins
3 lbs tart apples, cored (9 medium)
1 1/2 cups apple cider
3 cups firmly packed brown sugar
1 1/2 teaspoons salt
1 1/2 teaspoons ground cinnamon
1 1/2 teaspoons nutmeg
1 1/2 teaspoons cloves

Steps:

  • Remove seeds from orange and lemon.
  • Using coarse blade, force fruit through food chopper with raisins and unpeeled apples.
  • Add cider.
  • Put in kettle and bring to boil.
  • Simmer, uncovered, for 15 minutes.
  • Add remaining ingredients, and simmer for 20 minutes longer, or until thick.
  • Makes enough filling for three 9-inch pies.

150g sultanas
100g raisins
75g mixed peel
1 lemon, zested and juiced
75g suet (check it's vegetarian and gluten-free, if needed)
1 small cooking apple, peeled, cored and finely chopped
1½ tsp mixed spice
1 tsp ground cinnamon
200g dark muscovado sugar
100ml brandy

Steps:

  • Put all the ingredients, except the brandy, in a large saucepan. Cook over a low heat for 10 mins, stirring occasionally, until the sugar and suet have completely dissolved.
  • Remove from the heat and leave to cool to room temperature before stirring in the brandy. The mincemeat may look loose at this stage, but it will continue to thicken. You can encase it in pastry as soon as it's cooled. Alternatively, spoon the warm mincemeat into a large sterilised jar or several smaller ones (see tip, below). Will keep in a cool, dry place for up to six months.

2 (1 lb) cans sliced peaches
1/4 cup fresh lemon juice
2 (3 ounce) packages lemon gelatin
2 cups hot water
4 teaspoons milk
1/4 cup mayonnaise
6 ounces cream cheese, softened
1/4 cup finely chopped pecans
2 (10 ounce) packages frozen red raspberries, thawed
1/4 cup fresh lemon juice
2 (3 ounce) packages raspberry gelatin
2 cups hot water

Steps:

  • Peach layer: Drain peaches; combine peach syrup, lemon juice and enough cold water to make 2 cups.
  • Dissolve lemon gelatin in 2 cups hot water; add syrup mixture and refrigerate until partially set.
  • Blend in peaches; pour into 3-quart mold. Refrigerate until set.
  • Cheese layer: Combine milk, mayonnaise, cream cheese and blend well. Stir in pecans. Spread cheese mixture over peach layer in mold and refrigerate till firm.
  • Raspberry layer: Drain raspberries; combine raspberry syrup, lemon juice and enough cold water to make 2 cups.
  • Dissolve raspberry gelatin in 2 cups hot water; add syrup mixture; refrigerate until partially set.
  • Blend in raspberries; pour over cheese layer in the mold. Refrigerate until set. This may require several hours.
  • To serve, unmold on a platter, slice and serve on a bed of lettuce.
