3 cups cubed cooked chicken
2 cups monterey jack cheese, shredded
1 (11 ounce) can corn, drained
1 (10 3/4 ounce) can cream of chicken soup
1 cup flour
1/4 cup cornmeal
1 3/4 teaspoons baking powder
1 teaspoon seasoning salt or 1/2 teaspoon chili powder (I use both)
1 1/2 cups milk
3 eggs, beaten
1/4 cup chopped onion
1 (4 ounce) can chopped green chilies, drained
1 (2 ounce) jar chopped pimiento, drained

Tips:

- To easily shred the chicken without waiting for it to cool down, use two forks to pull the chicken apart while it's still hot. - If you don't have refrigerated crescent roll dough, you can use a 16-ounce package of frozen dough, thawed in the refrigerator overnight. - For a spicier casserole, add a diced jalapeño pepper to the chicken mixture. - Top the casserole with shredded cheddar cheese, Monterey Jack cheese, or a combination of both before baking. - Serve the casserole with your favorite Mexican-inspired dishes, such as guacamole, salsa, sour cream, or Pico de Gallo.
