Brush or add 2 more tablespoons of oil to the griddle and put the sandwiches on the griddle. Press on the sandwich with a spatula to help toast evenly and hold the sandwich together. Cook until the cheese is melted and the bread is toasted, about 2 minutes on each side. Serve immediately with ketchup, for dipping.

- Pre heat oven to 375 degrees.
- In a medium heavy skillet cook chorizo until done and slightly crisp.
- Drain thoroughly.
- In a large bowl stir together flour, cheese, onion, sugar, baking powder, cumin and baking soda.

- Stin in milk.
- Add eggs one at a time beating well after each addition.
