3/4 cup grated provolone
6 tablespoons (3/4 stick) butter
8 ounces pancetta, cut into 1/4-inch dice
2 large onions, finely chopped
2 carrots, peeled and finely chopped
3 celery stalks, finely chopped
2 tablespoons chopped fresh rosemary leaves
3 garlic cloves, chopped
2 (7.4-ounce) jars roasted peeled whole chestnuts, coarsely broken
1/4 cup chopped fresh Italian parsley leaves

  • Preheat the oven to 350 degrees F.
  • Whisk the first 7 ingredients in a large bowl to blend. Stir in the Parmesan and bread crumbs. Mix in the beef, pork, and veal. Pack half of the meat mixture into a 9 by 5 by 3-inch loaf pan. Spoon the stuffing over the meat in the pan, leaving a 1-inch border around the edges. Top with the remaining meat mixture, enclosing the stuffing completely and pressing firmly. Spoon the marinara sauce over the meatloaf, then sprinkle with the provolone cheese.

Add the bread and Parmesan and toss to coat. Add enough broth to the stuffing mixture to moisten. Season the stuffing, to taste, with salt and pepper. Mix in the eggs.
  • Transfer the stuffing to the prepared dish. Cover with buttered foil, buttered side down, and bake until the stuffing is heated through, about 30 minutes. Uncover and continue baking until the top is crisp and golden, about 15 minutes longer.

CHEESE STUFFED ITALIAN MEATLOAF

Cheese Stuffed Italian Meatloaf image

I wanted to make a different sort of meatloaf for dinner last night, and this is what I came up with. This meatloaf is moist and cheesy and oh-so-delicious! Tastes pretty darn good cold, too. :) I often make a double batch and freeze one in a disposable meatloaf pan to give to bachelor friends.

Categories     Lunch/Snacks

Time 1h10m

Yield 6-8 serving(s)

Number Of Ingredients 10

1 egg
1 cup seasoned dry bread crumb
1 teaspoon minced garlic
1/2 cup of your favorite pasta sauce, homemade or in the jar
1 cup chopped onion
1/4 cup chopped fresh basil
3/4 lb lean ground beef
1/2 lb hot Italian sausage
1 cup cubed mozzarella cheese, in about 1/4 inch pieces
additional pasta sauce, for garnish

Steps:

  • Preheat oven to 350 degrees F.
  • In a large bowl, stir together the egg, breadcrumbs (I whir herbed dry stuffing mix in my food processor to make these), garlic, and 1/2 cup pasta sauce until well-mixed.
  • Add remaining ingredients (except the garnish), and mix together well (I do the whole thing in my sturdy KitchenAid mixer, which works quite well).
  • Put into a large loaf pan, top/garnish with additional pasta sauce (I like a*lot* of sauce and so use about a half-cup, but three or four tablespoons would do, too), and bake at 350 degrees F for 1 hour.
  • Serve with rice, spaghetti, or scalloped potatoes.

Tips:

  • Choose the right ground beef. Use a combination of ground chuck and ground sirloin for a flavorful and juicy meatloaf.
  • Season the meatloaf well. Use a generous amount of Italian seasoning, garlic powder, onion powder, and salt and pepper to flavor the meatloaf.
  • Don't overmix the meatloaf. Overmixing will make the meatloaf tough. Mix the ingredients just until they are combined.
  • Stuff the meatloaf with your favorite pasta. Use cooked spaghetti, macaroni, or penne. You can also add other fillings, such as cheese, vegetables, or hard-boiled eggs.
  • Wrap the meatloaf in bacon. This will help keep the meatloaf moist and flavorful. You can also use prosciutto or pancetta.
  • Bake the meatloaf at a low temperature. This will help prevent the meatloaf from drying out. Bake the meatloaf at 350 degrees Fahrenheit for 1 hour and 15 minutes, or until a meat thermometer inserted into the center reads 160 degrees Fahrenheit.
  • Let the meatloaf rest before slicing. This will help the meatloaf hold its shape. Let the meatloaf rest for 10 minutes before slicing.

Conclusion:

Italian-style stuffed meatloaf is a delicious and hearty dish that is perfect for a family meal. It is easy to make and can be tailored to your own taste. With a few simple tips, you can make a perfect Italian-style stuffed meatloaf that will be a hit with everyone at the table.
