6 cups fresh basil leaves
2 cups baby arugula
1 cup grated Parmesan
1/2 cup sliced almonds
2 large cloves garlic, peeled
Kosher salt
Two 8-ounce containers marinated mozzarella balls, cut in half, plus 1 cup oil from the mozzarella (supplement with olive oil if needed)
2 tablespoons olive oil, plus for brushing
1 1/2 pounds store bought pizza dough, at room temperature and divided into 3 balls
1 1/2 pounds assorted color cherry tomatoes, sliced in half

Steps:

  • Add to a high-powered blender the basil, arugula, Parmesan, garlic and a pinch of salt and blend while streaming in the mozzarella oil until smooth. Taste and add salt as needed. Set aside.
  • Preheat an outdoor grill to high (500 to 550 F.) While your grill is heating, lightly oil a large sheet pan (or 3 half-sheet pans) and place your dough balls on top. Use your fingers to stretch the pizza dough balls into a loose circle or oval about 1/8-inch-thick. Don't get too hung up on the shape, irregular is beautiful. Work your way around the dough to make sure that it's an even thickness throughout. Lightly brush oil on the top of the dough as well. Lightly sprinkle the tomatoes with salt.
  • Place your doughs on the hot grill and close the lid. Cook until golden brown char marks appear and the doughs are cooked on the underside, 2 to 3 minutes. Open the lid of the grill, flip the doughs over and quickly spoon the pesto over top of the cooked side leaving a little border for the crust. Top with the sliced tomatoes and marinated mozzarella. Close the lid and cook until the cheese melts and the doughs are completely cooked through, about 3 minutes. Remove from the grill and enjoy.

1 garlic clove, minced
1 tablespoon white-wine vinegar

1/2 teaspoon dried basil, crumbled
1/4 teaspoon dried thyme, crumbled
1/2 pound (about 25) brine-cured black olives, halved and pitted
2 large red bell peppers, roasted (procedure follows) and cut into 3/4-inch squares

  • To Roast Peppers
  • Using a long-handled fork char the peppers over an open flame, turning them, for 2 to 3 minutes, or until the skins are blackened. (Or broil the peppers on the rack of a broiler pan under a preheated broiler about 2 inches from the heat, turning them every 5 minutes, for 15 to 25 minutes, or until the skins are blistered and charred.) Transfer the peppers to a bowl and let them steam, covered, until they are cool enough to handle. Keeping the peppers whole, peel them starting at the blossom end, cut the tops, and discard the seeds and ribs. (Wear rubber gloves when handling chilies.)
  • In a bowl or resealable heavy plastic bag combine the mozzarella, the oil, the garlic, the vinegar, the orégano, the basil, the thyme, and salt and pepper to taste and let the cheese marinate for at least 4 hours at room temperature or chilled overnight. Thread a mozzarella cube, an olive half, and a roasted pepper square onto each of the wooden picks and arrange the brochettes on a platter. The hors d'oeuvres may be made 4 hours in advance and kept covered.

1/3 cup extra-virgin olive oil, plus more for brushing and drizzling
1/2 teaspoon pink peppercorns, lightly crushed
3 sprigs lemon thyme or regular thyme, plus more sprigs and flowers for serving (optional)
3 wide strips lemon zest, plus 2 tablespoons fresh juice (from 1 to 2 lemons)
3 cloves garlic, thinly sliced (3 tablespoons)
Kosher salt and freshly ground pepper
1 cup mild green olives, such as Castelvetrano, pitted and halved
1 baguette, halved lengthwise
1 medium ball (8 ounces) salted fresh mozzarella

Steps:

  • Fit a large pot with a steamer rack; add water until it reaches just below rack. Place artichokes in steamer, stem-sides up. (If necessary to fit, trim top third from each with a serrated knife.) Cover and bring to a boil, then reduce heat to medium and steam, adding more water as needed, until the tip of a knife slides in and out of stems easily, 30 to 35 minutes. Remove artichokes; when cool enough to handle, remove leaves and reserve for another use. Scoop out and discard chokes. Cut hearts into halves or quarters.

(Dish can be made to this point and refrigerated in an airtight container up to 3 days; bring to room temperature before serving.)
  • Preheat oven to 450 degrees. Brush cut sides of bread with oil; season with kosher salt and pepper. Place on a baking sheet; toast until golden brown on edges, about 8 minutes.

Vico's Marinated Eggplant With Tomatoes And Mozzarella image

4 baby eggplant, about 1 1/2 pounds
Salt to taste
2 cups white vinegar
3 cloves garlic, peeled and chopped
1 tablespoon fresh rosemary, chopped
1 tablespoon fresh sage leaves, chopped
1 cup extra-virgin olive oil, approximately
16 red, ripe plum tomatoes, about 2 pounds, cored
1/2 teaspoon fresh oregano leaves, chopped
Salt and freshly ground black pepper to taste
1/4 cup extra-virgin olive oil, approximately
3/4 pound fresh mozzarella cut into 1-inch cubes (see note)
1/3 cup fresh Italian parsley sprigs

Steps:

  • Peel the eggplant and cut into quarter-inch slices lengthwise. Salt each slice and stack in a shallow pie pan, cover with a plate that will fit inside the pan and weigh it down with a small heavy skillet. Refrigerate for 12 hours, draining once after the slices have given up some of their liquid.
  • Bring the vinegar and one cup of water to a boil in a medium-sized saucepan. Drain the eggplant slices and blanch the slices in the vinegar and water for one minute, drain and pat dry.
  • Lightly coat a non-reactive loaf pan with a little of the oil. Layer the pan with the eggplant slices, garlic, herbs and oil until all the ingredients are stacked in the pan. Cover with oil, cover tightly and refrigerate for one week before using.
  • Cut the tomatoes in half lengthwise and chop. Place them in a bowl with the oregano, salt and pepper and toss with the olive oil, or enough to coat, and set aside.
  • Place four to five marinated eggplant slices on individual serving plates and set aside.
  • Bring one quart of water to the boil in a medium-sized saucepan. Turn off the heat, add the mozzarella cubes and let sit for 30 seconds. Remove the cubes with a slotted spoon and divide among the salad plates. Evenly divide the tomatoes and their juices over the mozzarella and top with the parsley sprigs. Serve immediately.
