Steps:

  • Preheat the oven to 425 degrees F (220 degrees C).
  • Spray a 9x13-inch casserole dish with cooking spray.
  • Fill a large pot with lightly salted water and bring to a boil. Stir in the macaroni and return to a boil. Cook pasta uncovered, stirring occasionally, until it has cooked through but is still slightly firm, about 8 minutes; drain.
  • Slowly melt butter in a large pot over low heat. Stir in evaporated milk and black pepper; cook until heated through.
  • Whisk eggs in a bowl until smooth; whisk about 1/2 cup of the evaporated milk mixture into the eggs, 1 tablespoon at a time, until thoroughly incorporated. Whisk the egg mixture back into the saucepan with evaporated milk mixture. Continue to heat gently, whisking constantly, until the evaporated milk mixture almost comes to a simmer and the sauce thickens.
  • Gently mix salt and cooked macaroni into the sauce and stir to combine.
  • Spoon 1/4 of the macaroni mixture in a layer into the bottom of the prepared casserole dish and top with 1 cup shredded Cheddar cheese. Repeat layers three more times; top last cheese layer with paprika to taste.
  • Bake in the preheated oven until casserole is bubbling, about 20 minutes.

1 pie shell
1/2 cup extra-sharp cheddar cheese, half for pie shell and half for the topping
2 cups extra-sharp cheddar cheese, for sauce (additional)
1/2 cup parmesan cheese
1 1/2 cups uncooked elbow macaroni
1/4 cup butter
1/4 cup flour
2 cups milk
1/2 teaspoon salt
1/8 teaspoon pepper
6 ounces cream cheese
wax paper

Steps:

  • Preheat oven to 425°F.
  • Mix 1/4 cup of cheddar into pastry and shape pastry into a ball and roll out between 2 pieces of wax paper.
  • Place this into a 9-inch pie plate, prick bottom with fork.
  • Bake 15 minutes, remove from oven and let stand until you are finished the sauce mixture.
  • Reduce oven to 350°F.
  • Cook elbow macaroni.
  • Prepare cheese sauce by combining butter, flour, milk, salt, pepper, parmesan, cream cheese and 2 cups of cheddar cheese. Cook in sauce pan over medium heat until all ingredients are combined.
  • Add cooked noodles to cheese sauce mixture and pour into pie shell.

I use this as a side dish to baked or fried chicken, baked pork chops, kielbasa, or just about anything. It is an alternate to having the traditional potatoes at most meals. You will find this recipe is quick to put together and calls for a minimal number of ingredients. Leftovers can be reheated in a microwave.

1/2 lb elbow macaroni (about 2 cups dry)
1 large egg
2 tablespoons flour

This is a dish from my childhood that has taken me years to recreate. I think I've finally done it. I can't go to family dinners without it! In Jamaica, we use Scotch Bonnet peppers but you can use as much or as little hot peppers as you like. Feel free to vary the combination of seasonings until you find the combination that makes your taste buds dance. You can also cut the pie into little squares and serve them on toothpicks as an appetizer. And the best thing? It freezes very well and tastes even better as leftovers!

1 (14 ounce) package macaroni
4 cups grated yellow cheddar cheese
1 (12 ounce) can evaporated milk
1 large egg

1 small onion, chopped
2 stalks scallions, chopped (white part only)
1 clove garlic (chopped)

1 hot chili pepper, chopped (no seeds)

  • Cook the macaroni in salted water until it is well done but not soggy.
  • Drain well.
  • Meanwhile, place the onion, garlic, escallion, green pepper and hot pepper in a blender with a little of the milk and puree.

  • Take out 1 cup of the grated cheese and mix with the breadcrumbs.
  • Set aside.

  • Heat oven to 350 degrees F.
  • Mix the hot macaroni with the butter until all the butter is melted.
  • Add the remaining cheese and all of the seasoning mixture and mix until the melted cheese begins to form a sauce.
  • Once everything is well incorporated, add the egg and mix well.
  • Pour mixture into the prepared baking dish and top with breadcrumb/cheese mixture.
  • Pour remaining evaporated milk slowly over the top of the mixture, taking care not to let the dish overflow.
  • Let stand for about 15 mins so that the milk is absorbed.
  • Bake for about 30 mins or until the top is brown and crusty and the milk has been absorbed.
  • Let stand for another 15 minutes before serving.

This version has a Christmas Ham inspired toasty topping. While it can be served as an indulgent main, in Trinidad it's often cooled then chopped into squares as a party, barbecue or beach snack, and served with Tabasco.

500 g macaroni
30 ml olive oil
6 slices bacon
1 onion
400 ml evaporated milk
2 eggs, beaten
2 -6 red chilies, deseeded and finely chopped
250 g cheddar cheese, grated
1 teaspoon ground cloves
2 teaspoons black treacle
1 teaspoon mustard powder
1 tablespoon demerara sugar
2 -3 slices bread, crushed into breadcrumbs

Steps:

  • Preheat the oven to 180C/350F/gas mark 4. Cook the macaroni in salted water until al dente. Drain and cool.
  • Fry the bacon in the oil until all the fat has rendered, then remove from the pan, retaining the fat. Mix the topping ingredients with the fat, breadcrumbs last. Finely chop the bacon.
  • Mince the onion in a food processor with a little evaporated milk. Mix in the eggs and the rest of the milk, and season. Combine with the macaroni.
  • Stir in the bacon, chillies and most of the cheese.
  • Pour it all into a large, greased oven dish. Sprinkle the leftover cheese on top, then the topping. Bake for 30-40 minutes, then rest for at least 20 more, or overnight to serve cold the next day.

14 ounces diced seasoned tomatoes
1 cup tomato sauce
1/4 cup sliced pitted olive, chopped

2 tablespoons flour
2 cups milk
2 eggs, beaten
1 1/2 cups of grated cheddar cheese

  • Toss pasta with 1 tablespoon oil and garlic powder.
  • In a large frying pan, sauté the onion and garlic in a 1 tablespoon of oil. Add the meat and brown.

I found this several years ago in the newspaper. I tried it and it is wonderful. The ingredients meet and melt together and combine flavors that makes it top notch in my book. I hope you like it as much as my family does.

Number Of Ingredients 20

1 large onion, finely chopped
2 Tbsp butter or olive oil
1 1/2 lb ground beef
1/4 tsp salt
1/4 tsp cinnamon
3/4 tsp oregano, dried
2 c tomato puree
2 Tbsp minced parsley
1/2 lb small elbow macaroni
1 Tbsp cooking oil
freshly ground black pepper
CREAMY TOPPING
3 Tbsp butter
3 Tbsp flour
3 1/2 c milk
3 large egg yolks, lightly beaten
1/4 tsp nutmeg
1/4 tsp salt
1/4 tsp white pepper
1/2 c parmesan cheese

Steps:

  • 1. Saute onion in butter or olive oil in large heavy pan or skillet until soft. Stir in beef and cook until lightly brown.Season with salt, pepper, cinnamon, and oregano. Stir in tomato puree and parsley. Cover and simmer gently for 20 minutes. Taste and add more salt if necessary. Cook macaroni in large kettle of well salted boiling water until tender but still slightly firm. Drain, then rinse in lukewarm water. Mix cooking oil well through macaroni to prevent it from sticking together.
  • 2. CREAMY TOPPING----Melt butter and blend in flour. Stir in milk and cook about 5 minutes, stirring constantly to make a thin white sauce. Dip out 1 cup of hot sauce and pour thin stream into yolks, stirring constantly until well- blended. Pour mixture back into rest of sauce and stir for a few minutes over low heat. Do not allow to boil. Season with nutmeg, salt, and pepper.
  • 3. In greased 9x13 pyrex casserole, put a thin layer of macaroni, a layer of meat sauce, a second layer of macaroni, and a second layer of meat sauce. Pour creamy topping over all. Jiggle the dish so that some sauce runs through all layers. Sprinkle Parmesan over the top. Bake at 350 degrees for 45 minutes. Remove from oven and let stand 15-20 minutes. Cut into large squares and serve from pan.

1 lb elbow macaroni
2 eggs
2 tbsp. butter
1 cup onion, minced
1/2 cup green pepper, minced
1 - 1 1/2 tsp cayenne (mild-hot)
1 lb grated cheddar cheese
1 12 oz can evaporated milk
1/2 tsp salt

Steps:

  • 1. 1 Boil elbow macaroni for about 5 minutes, or until al-dente.
  • 2. Drain and return to pot.
  • 3. Stir in cheddar, pepper, and onion.
  • 4. In a small bowl or measuring cup stir together eggs, cayenne, evaporated milk, and salt.
  • 5. Pour over macaroni and stir to combine.
  • 6. Pour into a greased lasagna pan, spreading evenly with spatula.
  • 7. Dot with butter.
  • 8. Refrigerate the macaroni until needed.
  • 9. Bake at 350F for 30-45 minutes.
  • 10. Let cool about 10 minutes and slice into squares.
  • 11. Serve hot.
