MEXI GROUND BEEF CHILI MACARONI CASSEROLE
Sausage meat can be used in place of the ground beef, and any small pasta can be substituted for the macaroni. If you like more chili flavor then add in a couple tablespoons of chili powder. I have even added in some red kidney beans and sliced green olives to this casserole, but that is optional. This casserole can be completely prepared up to 24 hours in advance, cover the casserole dish tightly with plastic wrap, then refrigerate until ready to bake, increase the cooking time slightly. For taco seasoning see recipe #76616.

MACARONI GROUND BEEF CASSEROLE
This is another quick and easy recipe handed down to me by my mother. I usually have the ingredients in my cupboard and can easily throw this together for a quick family meal by adding just a salad. If you want to add a little zip, use pepper jack cheese in place of the cheddar.

Tips:
- Choose a lean ground beef: This will help reduce the amount of fat in the casserole.
- Use a variety of vegetables: This will add flavor and texture to the casserole. Some good options include onions, celery, carrots, bell peppers, and corn.
- Use a flavorful sauce: The sauce is what will tie all the ingredients together and make the casserole taste delicious. Some good options include a tomato-based sauce, a cheese sauce, or a cream sauce.
- Don't overcook the pasta: You want the pasta to be cooked through, but not mushy. Cook it according to the package directions and then drain it well.
- Use a casserole dish that is the right size: You don't want the casserole to be too crowded or too empty. A 9x13 inch casserole dish is a good option for most recipes.
- Top the casserole with cheese: This will give the casserole a golden brown crust and make it even more delicious.
- Let the casserole cool slightly before serving: This will help the flavors to meld together and make the casserole easier to serve.
