Brighten up your everyday cauliflower rice with the fresh flavors of cilantro and lime - a grain-free alternative to the traditional seasoned rice. Thawing the frozen "rice" in the microwave means this fast side dish comes together in a flash without skimping on flavors.

Provided by Food Network Kitchen

Time 15m

Yield 2 1/4 cups

Number Of Ingredients 8

1 tablespoon extra-virgin olive oil
1/2 yellow onion, cut into medium dice
1 clove garlic, minced
1 small jalapeno, seeds and stem removed, cut into small dice, optional
One 12-ounce package frozen riced cauliflower (about 2 cups), microwaved according to instructions
Kosher salt
Zest and juice of 1 lime (about 2 1/2 teaspoons each)
1/2 cup cilantro, chopped

Steps:

  • Heat the olive oil in medium 10-inch skillet over medium heat. Add the onion and saute, stirring frequently, until softened and transparent, 3 to 5 minutes. Add the garlic and jalapeno, if using, and cook until fragrant, about 1 minute. Add the riced cauliflower and 1 teaspoon of salt. Remove from the heat and finish by adding the lime zest and juice and cilantro. Mix until incorporated.

Tips:

  • Choose the right cauliflower. For the best results, use a head of cauliflower that is fresh and firm. Avoid heads that are starting to turn yellow or brown, or that have any soft spots.
  • Cut the cauliflower into small florets. This will help the cauliflower rice cook evenly. You can use a knife or a food processor to cut the cauliflower into florets.
  • Rinse the cauliflower rice. This will help to remove any dirt or debris from the cauliflower.
  • Cook the cauliflower rice in a single layer. This will help the cauliflower rice cook evenly and prevent it from becoming mushy.
  • Do not overcook the cauliflower rice. Overcooked cauliflower rice will become mushy and lose its flavor. Cook the cauliflower rice for just a few minutes, or until it is tender but still has a slight crunch.
  • Season the cauliflower rice to taste. You can add a variety of seasonings to cauliflower rice, such as salt, pepper, garlic powder, onion powder, or cumin. You can also add fresh herbs, such as cilantro or parsley.
  • Serve the cauliflower rice immediately. Cauliflower rice is best served immediately after it is cooked. However, you can also store leftover cauliflower rice in the refrigerator for up to 3 days.

Conclusion:

Cauliflower rice is a healthy and versatile alternative to traditional rice. It is low in calories and carbohydrates, and it is a good source of fiber and vitamins. Cauliflower rice can be used in a variety of dishes, such as stir-fries, soups, and salads. It can also be used as a pizza crust or a taco shell. With its mild flavor and ability to take on the flavors of other ingredients, cauliflower rice is a great way to add more vegetables to your diet.
