2 cups uncooked rotini or rotelle (spiral) pasta (6 oz)

  • In a large glass or plastic bowl, toss pasta, asparagus and chicken. Stir in garlic, basil, cheese, oil and lemon peel. Cover with plastic wrap; refrigerate 1 to 2 hours or until chilled.

Asparagus Lemon Pasta Salad image

Provided by Food Network Kitchen

Categories     main-dish

Time 30m

Yield 4

Number Of Ingredients 10

1/2 pound penne
1/4 cup and 1 teaspoon olive oil
1 bunch asparagus
1/2 cup water
3 tablespoons lemon juice
Grated rind of 1 lemon
Salt
Pepper

Tips:

  • Cook pasta al dente: This means cooking it until it is slightly firm to the bite. This will prevent it from becoming mushy in the salad.
  • Use fresh lemon juice: Fresh lemon juice has a brighter, more flavorful taste than bottled lemon juice.
  • Don't overdress the salad: A little bit of dressing goes a long way. Overdressing the salad will make it soggy and oily.
  • Add some fresh herbs: Fresh herbs, such as basil, parsley, or mint, can add a lot of flavor to the salad.
  • Serve the salad chilled: This salad is best served chilled. This will help the flavors to meld together and the salad will be more refreshing.

Conclusion:

Lemon pasta salad is a light, refreshing, and flavorful salad that is perfect for summer. It is easy to make and can be tailored to your own taste preferences. With a few simple tips, you can make a delicious lemon pasta salad that will be a hit at your next party or gathering.
