Tips:

  • Choose the right chicken. The best chicken for Kentucky colonels is a whole fryer chicken, which is a young chicken that is typically between 2 and 3 pounds in weight. It should be fresh and free of any bruises or blemishes.
  • Brine the chicken. Brining the chicken helps to keep it moist and flavorful. To brine the chicken, dissolve 1 cup of salt and 1/2 cup of sugar in 1 gallon of cold water. Submerge the chicken in the brine and refrigerate for at least 4 hours, or up to overnight.
  • Coat the chicken in flour. Before frying, coat the chicken in flour. This helps to create a crispy crust. To coat the chicken in flour, place the chicken in a large bowl or bag and add enough flour to coat. Shake the bowl or bag to evenly coat the chicken.
  • Fry the chicken. Heat a large pot or Dutch oven over medium-high heat. Add enough oil to cover the bottom of the pot. When the oil is hot, carefully add the chicken and fry until it is golden brown and cooked through, about 10-12 minutes per side.
  • Season the chicken. After frying, season the chicken with salt, pepper, and paprika. You can also add other seasonings, such as garlic powder, onion powder, or cayenne pepper.

Kentucky colonels are a delicious and easy-to-make dish that is perfect for any occasion.
