Time 35m

Yield 10 to 12 servings (about 3 quarts)

Number Of Ingredients 9

1 1/2 cups sugar
2 cups fresh mint leaves, lightly packed
1/2 cup light corn syrup
2 cups canned crushed pineapple in its own juice
1 1/2 cups pineapple juice
2 cups milk
2 cups heavy cream
1/2 cup white crème de menthe
1/4 cup freshly squeezed lemon juice

Steps:

  • In a medium saucepan, combine the sugar with 1 1/2 cups water and cook to boiling over medium-high heat until the sugar dissolves. Boil without stirring for about 10 minutes, or until it reaches the soft-ball stage (234 to 240 degrees on a candy thermometer), when a drop forms a soft ball in a cup of cold water. Stir in the mint and simmer over medium heat 10 minutes more. Remove from heat and let cool.
  • Pour the mint syrup into a blender and purée; strain into a large mixing bowl. Stir in the corn syrup. Purée the pineapple and pineapple juice in a blender and add to the mint-syrup mixture, along with the milk, cream, crème de menthe and lemon juice. Chill at least 4 hours or overnight and freeze according to the ice-cream maker's directions.

Number Of Ingredients 4

1 pineapple, peeled, cored, and coarsely chopped (about 6 cups)
5 cups ice, plus more for glasses
1/4 cup sugar
1/2 cup loosely packed fresh mint, plus sprigs for garnish (optional)

Steps:

  • Puree the pineapple in a blender until smooth. Pour puree through a fine sieve into a bowl; discard solids. Return half the juice to blender; blend with half the ice and sugar. Add half the mint; pulse to combine. Transfer to a pitcher; repeat with remaining ingredients. Stir just before serving; pour into ice-filled glasses. Garnish with mint sprigs, if desired.

Tips:

  • Use ripe pineapple: The riper the pineapple, the sweeter and more flavorful your ice cream will be.
  • Freeze the pineapple in chunks: This will help it blend more easily and create a smoother ice cream.
  • Don't over blend the ice cream: Over blending can make the ice cream icy and less creamy.
  • Chill the ice cream base before churning: This will help it churn faster and create a creamier ice cream.
  • Use fresh mint leaves: Fresh mint leaves will give the ice cream a bright, refreshing flavor.
  • Add the mint leaves at the end of churning: This will prevent them from getting bruised and losing their flavor.
  • Store the ice cream in an airtight container in the freezer: This will help it stay fresh for up to 2 weeks.

Conclusion:

This pineapple mint ice cream is a delicious and refreshing treat that is perfect for summer. It is easy to make and can be enjoyed by people of all ages. The combination of pineapple and mint is a classic flavor combination that is sure to please everyone. So next time you are looking for a sweet treat, give this pineapple mint ice cream a try. You won't be disappointed!
