1 cup sliced fresh carrots
1 large baking potato, peeled, cut into 1/2-inch cubes
1 garlic clove, minced
2 (14-oz.) cans beef broth
1 (15-oz.) can garbanzo beans or Chickpeas, drained
1 (14.5-oz.) can pasta-style chunky tomatoes, undrained
1 1/2 cups water
1/2 teaspoon dried Italian seasoning
1 bay leaf
1 cup julienne-cut (2x1/8x1/8-inch) zucchini
1/4 cup grated fresh Parmesan cheese, if desired

Steps:

  • Cook sausage in large skillet until no longer pink, stirring frequently. Drain. In 3 1/2 or 4-quart slow cooker, combine cooked sausage and all remaining ingredients except zucchini and cheese; stir gently to mix.
  • Cover; cook on Low setting for 7 to 9 hours.
  • About 30 minutes before serving, remove and discard bay leaf from soup. Gently stir in zucchini. Cover; cook an additional 30 minutes or until zucchini is tender.

3 cups water
1 bunch kale, washed and chopped
1 (10 1/2 ounce) can condensed French onion soup
8 ounces mild Italian sausage, casings removed
1 (9 ounce) package refrigerated cheese tortellini
grated parmesan cheese

Steps:

  • Brown italian sausage in large skillet over medium-high heat. Drain fat. Transfer to 4 or 5 quart slow cooker.
  • Add undrained tomatoes, water, and onion soup.
  • Cover; cook on low for 8 to 10 hours or on high for 4 to 5 hours.

1 jar(s) 32 oz sauerkraut, undrained
1 large sweet onion, cut in half
1 large yellow bell pepper
1 large red bell pepper
1 tsp sea salt
1 tsp red pepper flakes

This came to me in a 'round about way from the Betty Crocker website. It doesn't appear to be on Food.com. We really enjoyed it. I used pound ground sausage with Sage as I had on hand and added 2 tsp ground up Fennel Seed to give it the "Italian" touch. Who knew you could make lasagna in a crock pot? Mine tapers in toward the bottom, so the shape isn't "traditional but it cooked nicely. The flavor was great. Hope you like it!

1 lb bulk Italian sausage
1 medium onion, 1/2 cup chopped
3 (15 ounce) cans Italian-style tomato sauce
2 teaspoons dried basil leaves
1/2 teaspoon salt
2 cups mozzarella cheese, shredded (divided)
1 (15 ounce) container part-skim ricotta cheese
1 cup parmesan cheese, grated
15 lasagna noodles, regular, uncooked

Steps:

  • Cook sausage and onion in 10-inch skillet over medium heat 6-8 minutes, stirring occasionally, until sausage is no longer pink; drain. Stir in undrained tomato sauce, basil and salt.
  • Mix 1 cup of the mozzarella cheese and the ricotta and Parmesan cheeses. Refrigerate remaining mozzarella cheese while lasagna cooks.
  • Spoon 1/4 of the sausage mixture into 6-quart slow cooker; top with 5 about noodles, broken to fit the pot. Spread with 1/2 of the cheese mixture and 1/4 of the sausage mixture. Top with 5 noodles, remaining cheese mixture and 1/4 of the sausage mixture. Top with remaining 5 noodles and remaining sausage mixture.
  • Cover and cook on Low heat setting 4-6 hours or until noodles are tender.
  • Sprinkle top of lasagna with remaining mozzarella cheese. Cover and let stand about 10 minutes or until cheese is melted. Cut straight down and enjoy!
  • Tips: Sprinkle some chopped fresh parsley on top before serving for added appeal. Italian sausage can be interchanged with the hot or spicy varieties for more zing. Links can be substituted by cutting the casings and squeezing the meat out and cooking as directed.

1 (29oz) can crushed tomatoes
1 (11.5oz) can tomato juice, (not vegetable juice)
1 (10oz), can tomato paste
1 1/2 cups wine
3 tablespoons minced garlic
3 tablespoons italian seasoning.
3 tablespoons dried basil
2 tablespoons dried parsley
1/4 teaspoon freshly ground black pepper
1 pound pkg frozen italian sausage, sweet or hot
1 pound box penne pasta
Freshly grated parmesan or romano

Steps:

  • In a 3 quart or larger crock pot add all ingredients up to sausage and stir to combine. add frozen sausage and submerge in sauce. Cook on medium for eight hours. At the end of cooking time, do not disturb the sauce until you have skimmed off the excess oil from the sausages. Aproximately 30 minutes before dinner time bring large pot of water to a boil and cook penne according to package directions. Drain and stir two ladles of sauce into pasta to keep from sticking. Serve a bowl of pasta with one sausage and as much sauce as desired over the top. Sprinkle with cheese.
