Irish soda bread, a staple of traditional Irish cuisine, is a quick bread that is incredibly easy to make, requiring minimal ingredients and no kneading. Unlike yeast breads that rely on the slow rising action of yeast, Irish soda bread uses baking soda and buttermilk to create a light and fluffy texture. The baking soda reacts with the acidic buttermilk, producing carbon dioxide gas that causes the bread to rise. This bread has a slightly sour flavor and a dense, crumbly texture that pairs perfectly with a slather of butter and a cup of tea. Our collection of Irish soda bread recipes offers a variety of options to suit your taste, from the classic plain soda bread to variations with added fruits, nuts, and spices.

Yield 1 1/2 pound loaf

Number Of Ingredients 10

1 1/8 cups lukewarm water
3 cups white bread flour
1 tablespoon sugar
1 1/2 teaspoons salt
2 tablespoons butter
2 tablespoons dry buttermilk
1/4 teaspoon baking powder
1 tablespoon caraway seed
1 cup golden raisin
1 1/2 teaspoons fast rise yeast or 2 teaspoons active dry yeast

Steps:

  • Success Hints: Golden raisins give this bread its light flavor and look.
  • Dark raisins may be subsituted but will make a darker, slightly heavier loaf.
  • The sugar in the raisins creates a darker crust; use your machine's"light crust setting" if it has one.
  • Dried butter milk can generally be found in the baking goods section of your supermarket.
  • If you can't find buttermilk, regular dried milk can be substituted.
  • If using delayed time bake, place raisins atop dry ingredients away from liquid.

Time 3h15m

Yield 1 loaf, 12 serving(s)

Number Of Ingredients 15

2 cups bread flour
1 cup whole wheat flour
1/4 cup dry buttermilk
2 tablespoons cornmeal
1 1/2 teaspoons salt
1/2 teaspoon baking soda
1 cup water
1 large egg
2 tablespoons molasses
1 tablespoon honey
1 3/4 teaspoons yeast (preferrably fast rising)
3/4 cup currants or 3/4 cup raisins
1 tablespoon caraway seed
2 tablespoons butter
1 tablespoon vital wheat gluten (optional)

Steps:

  • Process all ingredients in your bread machine set on the dough cycle.
  • Remove from bread machine, punch down, cover and let rest for 15 minutes.
  • Prepare a baking sheet (I cover it with parchment paper). Punch the dough down, and shape it into an 8-inch circle, slightly flattened. Cover with wax paper, and let rise in a warm place for 1 hour.
  • Preheat oven to 375°F Slash the top of the dough with a large X. Bake for 15 minutes, then reduce the temperature to 350 and continue to bake for 15 more minutes.
  • Don't forget leftovers, if any, are great for sandwiches.

Tips:

  • For a denser bread, use buttermilk instead of regular milk.
  • If you don't have buttermilk, you can make your own by adding 1 tablespoon of lemon juice or vinegar to regular milk and letting it sit for 5 minutes.
  • Be sure to grease the bread pan before baking.
  • To test if the bread is done, insert a toothpick into the center. If it comes out clean, the bread is done.
  • Let the bread cool for at least 10 minutes before slicing and serving.
