HOMEMADE LAVENDER HONEY

Homemade Lavender Honey image

In Provence, lavender honey is made by the bees that frequent the wild purple-budded bushes growing near their hives. Be aware that this homemade version, infused with lavender flowers, needs to stand for 24 hours before being used. If you purchase dried lavender flowers, be sure that they are culinary quality. A lovely gift! From "From the Cook's Garden".

HOMEMADE LAVENDER HONEY FROM SOUTH WEST FRANCE

Homemade Lavender Honey from South West France image

A quick and easy home-made honey recipe from the Auberge in South West France! I use lavender honey so much in my cooking, that I thought it was about time I made my own - given that I have about 30 lavender bushes! As well as giving an amazing and subtle flavour to your recipes, it also makes a wonderful gift for a fellow foodie. I plan on making my own lavender honey all the time now, as even in France, it is quite expensive to buy. You can increase the quantities to make more jars - just remember to keep the flower to honey ratio the same.

Auberge French Lavender Pancakes With Lavender Honey image

Our own Auberge de la Fontaine Lavender Pancakes - these are made with home-grown organic lavender flowers from our garden here in SW France, where we often serve them for breakfast! They also make a very elegant dessert when served with cream and fruit - I sometimes serve them with Recipe #241775. If you cannot get hold of culinary lavender, these pancakes are just fine if served with the lavender honey, butter and/or cream and fresh fruit.

LAVENDER HONEY

Lavender Honey image

Spoon warmed lavender honey over Figs and Raspberries for a fragrant dessert.

Provided by Martha Stewart

Categories     Food & Cooking     Dessert & Treats Recipes

Yield Makes about 3/4 cup

Number Of Ingredients 2

3/4 cup mild honey such as clover honey
10 to 15 fresh or dried lavender blossoms

Steps:

  • Heat honey in a saucepan over medium heat until hot. Stir in lavender. Let cool. Refrigerate, covered, overnight.
  • Heat lavender honey over medium heat until heated through. Pour through a fine sieve into a bowl; discard lavender.

Tips:

  • Use fresh lavender flowers: Fresh lavender flowers have the best flavor and aroma. If you can't find fresh lavender, you can use dried lavender buds, but they will not be as flavorful.
  • Choose a mild honey: A mild honey, such as clover honey or orange blossom honey, will allow the flavor of the lavender to shine through. Avoid using a strong-flavored honey, such as buckwheat honey or manuka honey.
  • Don't overheat the honey: Heating the honey too high will damage its flavor and nutrients. Keep the temperature below 140 degrees Fahrenheit.
  • Store the honey in a cool, dark place: Honey can be stored in a jar or bottle at room temperature for up to a year. However, it will keep its flavor and aroma best if it is stored in a cool, dark place, such as a pantry or cupboard.

Conclusion:

Lavender honey is a delicious and versatile ingredient that can be used in a variety of recipes. It is a great addition to tea, coffee, and yogurt. It can also be used as a marinade for chicken, fish, or vegetables. And it makes a wonderful glaze for roasted meats and vegetables. So next time you're looking for a unique and flavorful way to sweeten your food, reach for lavender honey.
