Time 45m

Number Of Ingredients 8

3 tablespoons chopped fresh herbs, such as parsley or dill, or a combination
6 tablespoons extra-virgin olive oil
1/2 teaspoon finely grated lemon zest, plus 2 tablespoons fresh juice
Kosher salt and freshly ground pepper
3 cups cherry tomatoes (1 1/2 pints)
2 cloves garlic, minced (2 teaspoons)
Pinch of red-pepper flakes
3 swordfish steaks (each 1 inch thick; about 1 1/2 pounds total)

Steps:

  • Preheat oven to 425°F, with a rack 6 inches from heating element. Stir together herbs, 1/4 cup oil, and lemon zest and juice; season with salt and pepper.
  • Toss tomatoes with remaining 2 tablespoons oil; season with salt and pepper. Arrange tomatoes in a shallow nonreactive baking dish and roast, stirring once halfway through and breaking up some with back of spoon, until burst and beginning to collapse, 15 to 20 minutes. Stir in garlic and red-pepper flakes; roast 5 minutes more. Remove from oven and cover; switch oven to broil.
  • Meanwhile, season swordfish with salt and pepper and rub half of herb oil over both sides. Let stand 15 minutes. Arrange fish on a broiler-safe pan and broil, flipping halfway through, until cooked through and browned in places, 6 to 8 minutes total. Transfer to dish with tomatoes, slice, and serve, drizzled with remaining herb oil.

Yield Makes 25 servings

Number Of Ingredients 9

2 pounds (6 cups) very small cherry tomatoes, halved
1/4 cup olive oil
4 shallots, minced
2 teaspoons balsamic vinegar
1/4 teaspoon dried crushed red pepper
2 tablespoons chopped fresh marjoram
2 1-pound ciabatta breads, halved horizontally
Additional olive oil
Additional chopped marjoram

Steps:

  • Preheat oven to 375°F. Mix tomatoes, 1/4 cup oil, shallots, vinegar, and crushed red pepper in 13x9x2-inch glass baking dish. Roast uncovered until tomatoes are very tender and juicy, stirring occasionally, about 45 minutes. Stir in 2 tablespoons marjoram. Season with salt and pepper. (Can be prepared 1 day ahead. Cover and refrigerate.)
  • Brush cut surface of each bread half lightly with additional oil. Arrange bread, cut side up, on baking sheet. Distribute about 1 cup tomato mixture over each bread half. Bake until bread is crusty, about 10 minutes. Transfer to cutting board. Sprinkle with additional marjoram and freshly ground black pepper. Cut bread into squares and serve.

Tips:

  • Use a variety of cherry tomatoes. This will give your dish a more complex flavor and visual appeal. If you can, try to find a mix of colors, such as red, orange, and yellow.
  • Roast the tomatoes at a high temperature. This will help to caramelize the tomatoes and bring out their natural sweetness.
  • Be careful not to overcrowd the baking sheet. The tomatoes need room to roast evenly.
  • Season the tomatoes generously with herbs and spices. This will help to enhance their flavor.
  • Serve the tomatoes immediately. They are best enjoyed fresh out of the oven.

Conclusion:

Roasted cherry tomatoes are a delicious and versatile dish that can be enjoyed as an appetizer, side dish, or main course. They are also a great way to use up fresh tomatoes when they are in season. With so many different ways to flavor and serve them, roasted cherry tomatoes are sure to become a favorite in your kitchen.
