6 ripe tomatoes
1 tablespoon Dijon mustard
2 tablespoons red-wine vinegar
4 tablespoons finely chopped shallots or green onions

Salt and freshly ground pepper
4 tablespoons coarsely chopped basil

Steps:

  • Trim ends of beans and leave them whole.
  • Drop beans into a saucepan with salted boiling water. Cook until crisp tender, about 3 to 5 minutes according to the size of the beans. Do not overcook. Drain and let cool.
  • Cut away the core of each tomato, and cut it into wedges.

2 green bell peppers, seeded and cut into 1 1/2-inch dice
3 vine-ripe tomatoes, seeded and diced
1 small onion, chopped
1 large clove garlic, finely chopped
1/2 cup flat-leaf parsley leaves, coarsely chopped
1/2 lemon, juiced (1 tablespoon)
1 tablespoon red wine vinegar
3 tablespoons extra-virgin olive oil
Coarse salt and black pepper
1 teaspoon ground cumin, 1/2 a palm full

Steps:

  • Combine peppers, tomatoes, onions, garlic, parsley in a bowl with your fingertips. Squeeze the juice of the lemon with the lemon half sitting upright. This will help prevent the seeds from falling into the bowl. The lemon juice will spill down over the sides of the lemon and the seeds will remain with the fruit. Squeeze the juice evenly over the salad. If the lemon is under-ripe, microwave it for 10 seconds before you cut into it. Next, sprinkle a tablespoon of vinegar over the salad -- just eyeball it. Drizzle the extra-virgin olive oil over the salad, add the salt, pepper and cumin. Toss again. Taste to adjust seasonings and serve.

⅔ pound thin green beans, trimmed

1 tablespoon red wine vinegar
2 tablespoons whole-grain mustard
2 cloves garlic, minced
½ teaspoon honey
¼ cup olive oil
6 ounces crumbled feta cheese

  • Preheat an oven to 225 degrees F (110 degrees C).
  • Slice the cherry tomatoes in half, and arrange them, cut sides up, on a baking sheet. Sprinkle them with salt, pepper, and the bay leaf; drizzle with 1/4 cup olive oil.
  • Bake the tomatoes until they are shriveled and dry on the outside, but a little moist inside, about 2 hours.

2 green tomatoes, sliced
2 tablespoons balsamic vinegar
1 tablespoon honey

  • For the fried green tomatoes: Preheat the frying oil to 350 degrees F in a heavy-bottomed pot over medium to medium-high heat.
  • In a shallow dish, combine the cornmeal, paprika, cayenne, salt and pepper and whisk together. In second shallow dish add the eggs, and in a third shallow dish add the flour. Dredge the slices of tomato into the flour, then the eggs and then the seasoned cornmeal. 1 lb green beans
1/4 cup sliced green onion
3 tomatoes
1 tablespoon dijon-style mustard
1 tablespoon white wine vinegar

Steps:

  • Cut salami into 2 inch by 1/4 inch thick sticks, put into mixing bowl.
  • Trim tips and ends from green beans. Cut into pieces about 3 inches long. Steam for 10 mins or until beans are tender. Drain. Combine beans with the salami in bowl. Add the sliced green onion.

Green tomatoes are either nearly impossible to find or in such abundance that farmers at the greenmarket almost give them away. This recipe was inspired by Rachael Ray, who gets green tomatoes from a wholesaler when they're scarce or has a favorite farmer at the Union Square Greenmarket in Manhattan set some aside during the late spring and early summer when they're abundant. You can adjust the amount of peppers to control the heat. And red tomatoes work fine if you can't find green ones.

1 lb thin string bean
2 tablespoons good quality red wine vinegar (preferably Italian or French)
3 tablespoons peanut oil or 3 tablespoons grapeseed oil
salt and pepper
3 large fresh tomatoes
1/3 cup virgin olive oil
1/3 cup thinly sliced onion, for garnish
15 -20 basil leaves

Steps:

  • Place approximately 1/2 inch of water in a medium-sized stainless steel saucepan and add about 1/2 teaspoon salt.
  • Bring to a boil.
  • Add the string beans.
  • Cover and bring to a strong boil for 5 minutes.
  • They just turn crunchy, cooked and a wonderful green (not brownish!).
  • Using a skimmer, lift the beans from the pan and spread them on a large plate to cook off.
  • Toss the beans with 2 tbsp white wine vinegar and oil.
  • Season and set aside.
  • Peel the tomatoes if desired but it is not necessary.
  • Slice crosswise very thinly.
  • Place the seasoned string beans in the center of a large platter and arrange the slices of tomatoes around.

  • Then sprinkle with vinegar and oil.
  • Wash the fresh basil leaves and separate the leaves.
  • Pile the largest leaves together.
  • Roll the leaves into a tight bundle and slice them into very thin, long strips.
  • Cut the onion into very thin slices and separate the slices into individual rings.
  • With the beans at the center of the plate, sprinkle the onions on top, surround the green beans with tomato slices, and then arrange the sliced basil leaves around it forming a border.

2 heads Boston lettuce, trimmed, leaves separated
1 cup fresh basil leaves
4 ounces caciocavallo or Parmesan cheese, shaved

  • Preheat grill to medium-high. Grill corn, turning, until charred on all sides, about 5 minutes. When cool enough to handle, cut kernels from ears.

1/2 cup pitted Kalamata olives or other brine-cured black olives
2 shallots, finely chopped
2 tablespoons fresh lemon juice
1 tablespoon Dijon mustard
1 tablespoon anchovy paste
2 1/2 teaspoons grated lemon peel
1 teaspoon chopped fresh thyme
1/2 teaspoon dried crushed red pepper
2/3 cup extra-virgin olive oil
1 1/2 pounds green beans, trimmed, cut into 2-inch pieces
1 pint grape tomatoes, left whole, or cherry tomatoes, halved

Steps:

  • Combine olives, shallots, lemon juice, mustard, anchovy paste, lemon peel, thyme, and dried crushed red pepper in processor. Blend until finely chopped. With machine running, gradually add oil and blend until almost smooth. Season vinaigrette to taste with salt and pepper.
  • Cook beans in large saucepan of boiling salted water just until crisp-tender, about 4 minutes. Drain. Refresh beans under cold water; pat dry with paper towels. (Vinaigrette and beans can be made 1 day ahead. Cover separately; chill.)
  • Toss beans, tomatoes, and vinaigrette in large bowl to blend. Season to taste with salt and pepper and serve.

Green Tomato Salad With Russian Dressing image

This salad is inspired by one that Los Angeles-based chef Mark Peel serves at his wonderful restaurant, Campanile. Green tomatoes go well with Russian dressing. My version combines mayonnaise with yogurt, and if I don't make the mayonnaise myself, I always use Hellmann's (called Best in Western states) because it isn't sweet.

1 1/4 pounds green tomatoes, sliced 1/4 inch thick
1 large red beefsteak tomato, halved and sliced 1/4 inch thick
2 teaspoons sherry vinegar or champagne vinegar
1 tablespoon extra virgin olive oil
Salt, preferably coarse sea salt or kosher salt, and freshly ground pepper to taste
1/4 cup Hellmann's Real Mayonnaise or Best Foods Mayonnaise (they are the same product)
1/4 cup plain low-fat yogurt
2 tablespoons ketchup
1 tablespoon capers, rinsed and chopped
2 tablespoons finely chopped red onion, soaked for five minutes in cold water, drained, rinsed, and drained on paper towels optional
1 teaspoon finely chopped fresh parsley
1 hardboiled egg, cut in wedges

Steps:

  • Toss together the tomatoes, vinegar and olive oil, and season to taste with salt and pepper. Line an oval or round platter with the tomato slices, overlapping them slightly and sliding in a red tomato slice at regular intervals.
  • Whisk together the mayonnaise, yogurt and ketchup. Stir in the capers and red onion. Spoon the dressing over the tomatoes. Sprinkle on the parsley, garnish with hard-boiled egg wedges, and serve.

Can't remember where I got this one but I love it more everytime I fix what could be considered a salad or fresh vegetable side.

1 garlic clove
1 shallot
2 tablespoons water
1 1/2 teaspoons salt
1/2 teaspoon ground pepper
2 tablespoons Dijon mustard
1 tablespoon sugar
3/4 cup olive oil
15 fresh basil leaves
1 -1 1/2 lb green beans, with tips clipped
2 beef steak tomatoes or 1 pint , grape tomatoes-split

Steps:

  • Combine dressing ingredients in food processor and pulse until blended.
  • Boil and ice green beans.
  • Place prepared beans on platter surronded with tomatoes and pour a generous amount of dressing over beans and tomatoes.
  • Garnish with a few basil leaves and serve.
