3/4 pound fusilli
2 tablespoons extra-virgin olive oil, plus more for drizzling
1/2 teaspoon finely grated lemon zest, plus 4 teaspoons fresh juice and more zest for serving
Kosher salt and freshly ground pepper
1 1/4 pounds boneless, skinless chicken breasts, cut into 1/2-by-2 1/2-inch strips
1/3 cup chopped fresh dill, plus more for serving

Steps:

  • Combine broth, pasta, oil, lemon zest, 1 teaspoon salt, 1/4 teaspoon pepper, and 1/2 cup water in a large straight-sided skillet. Bring to a boil over medium-high and cook, stirring occasionally, 9 minutes.

½ cup chopped red onion
1 tablespoon olive oil
2 cloves garlic, crushed
1 pound skinless, boneless chicken breast meat - cut into bite-size pieces
1 (14 ounce) can marinated artichoke hearts, drained and chopped
1 large tomato, chopped
½ cup crumbled feta cheese
3 tablespoons chopped fresh parsley
2 tablespoons lemon juice
2 teaspoons dried oregano
salt and pepper to taste

1/2 cup Greek yogurt
2 Tbsp lemon juice
2 tsp fresh oregano, chopped
3 boneless, skinless chicken breasts, cut into chunks
1 tsp fresh oregano, finely chopped
12 oz penne pasta
3 cups chicken broth
1/2 cup sliced kalamata olives
1 cup sliced grape tomatoes
1 Tbsp lemon juice
1/2 cup crumbled feta
1 Tbsp chopped parsley
Salt and pepper

Steps:

  • In a medium bowl, whisk together Greek yogurt, 2 Tbsp lemon juice and 2 tsp oregano. Add chicken and stir to coat. Refrigerate for 15 minutes. Heat large pan over medium heat. Add pasta, chicken, 1 tsp oregano and chicken broth. Season with salt and pepper. Bring to a boil and then reduce to a simmer. Cover and simmer for 15 minutes.
