2 medium tart apples, peeled, cored and halved
1 cup plus 2 tablespoons unsalted butter, softened

1/2 teaspoon salt
1/4 cup 2% milk
Confectioners' sugar

Steps:

  • Preheat oven to 350°. Let egg yolks stand at room temperature for 30 minutes. Starting 1/2 in. from 1 end, cut apple halves lengthwise into 1/4-in. slices, leaving them attached at the top so they fan out slightly. Set aside., Cream butter and sugar until light and fluffy, 5-7 minutes. Add egg yolks, 1 at a time, beating well after each addition. 1 teaspoon cinnamon, plus 1 tablespoon cinnamon
1 tablespoon sugar
1/3 cup butter
1/2 cup sugar, plus 1 tablespoon
1 tablespoon brown sugar
1 egg
1/2 cup milk
1 cup flour
1/2 tablespoon baking powder
1 vanilla bean
2 cups milk scalded
6 yolks
1/2 cup sugar

Steps:

  • Peel the apples and cut into thin slices. Toss slices in a bowl with 1 tablespoon of cinnamon and 1 tablespoon of sugar. Melt butter. Brush mold with butter. Cool the remaining butter to room temperature and add 1/2 cup of sugar and brown sugar. Whisk butter and sugars until fluffy. Add egg with milk and whisk. This recipe is a family favorite, we even serve it for birthdays, just add a dusting of powdered sugar! My Grandmother Marguerite L.C. Seelhorst made this every time we came to visit. It is easy to make, and feeds a large gathering.

3 c chopped apples, granny smith, or your favorite baking apple.
1 c chopped nuts, either walnuts or pecans. may be omitted.
1 c vegetable shortening, or half butter and half shortening.
3 c sugar
3 eggs
DRY INGREDIENTS
2 1/2 c all purpose flour
2 tsp baking powder
1 tsp baking soda
1/2 tsp salt

Steps:

  • 1. Grease and flour a 9 X 12 X 3 pan and set aside.
  • 2. Peel and chop apples. You may add 1 tsp. of lemon juice to the apples to prevent browning. Chop nuts. Set aside.
  • 3. Cream together the shortening and sugar. Add the eggs and combine.
  • 4. In a large bowl sift together the flour, baking powder, soda and salt.
  • 5. Add the dry ingredients to the creamed mixture a little at a time. Fold in the 3 cups of apples and the chopped nuts. The batter will be STIFF!
  • 6. Place in the greased and floured pan. You will need to use a spoon or your hands to push the batter evenly into the pan. Don't worry, it will come out beautifully even though it looks lumpy!
  • 7. Bake for 1 hour at 350 degrees. Cake is done when it is nicely browned and a toothpick inserted in the center of the cake comes out clean.
  • 8. Allow to cool on a rack. This cake is delicious served warm with ice cream! Let it cool a bit first though. It also travels well, allow it to cool completely.

1/2 cup vegetable oil

I have cut the sugar down to 1 cup, as most modern apples are sweet enough to not need the original 2 cups called for. I like to replace 1 cup of all purpose flour with 1 cup whole wheat flour.
