Provided by Food Network Kitchen

Time 30m

Yield about 22 crisps

Number Of Ingredients 6

Nonstick cooking spray, for the parchment
1 1/2 cups riced cauliflower (about 5 1/2 ounces; see Cook's Note)
1 cup shredded Parmesan (about 2 ounces)
1 1/2 teaspoons Italian seasoning
1/2 teaspoon garlic powder
Kosher salt

Steps:

  • Preheat the oven to 375 degrees F. Line 2 baking sheets with parchment or silicone baking mats and spray with cooking spray.
  • Microwave the cauliflower in a microwave-safe bowl on high, stopping and stirring halfway through, until tender, about 2 minutes; let cool for 5 minutes.
  • Put the cauliflower in a clean towel and squeeze out any liquid. Transfer to a medium bowl and add the Parmesan, Italian seasoning, garlic powder and a pinch of salt. Stir to combine.
  • Scoop heaping-tablespoon mounds of the mixture onto the prepared baking sheets, spacing them about 2 inches apart (10 to 12 to a sheet). Shape and flatten the mounds into small discs, about 2 1/2-inches wide.
  • Bake until the edges of the crisps are deep golden brown, about 14 minutes. Let cool on the pan for 5 minutes before serving; the crisps will firm up as they cool.

GARLIC CRUSTED CAULIFLOWER

Garlic Crusted Cauliflower image

I like veggie dishes where the flavor of the vegetable comes through and isn't masked by heavy sauces, and this really fits the bill. The luscious crumb crust is VERY garlicky and the dish goes well with a simple entree and salad.

Categories     Cauliflower

Time 50m

Yield 4 serving(s)

Number Of Ingredients 7

1 lb cauliflower, cut into florets (about 3 to 4 cups)
4 garlic cloves
3/4 cup dry breadcrumbs
4 tablespoons olive oil
1 tablespoon mayonnaise
1 1/2-2 tablespoons butter
salt and black pepper

Steps:

  • Bring a large saucepan of water to a boil with three of the garlic cloves (halve or slice them). Add the cauliflower florets and cook for about 5 minutes. Drain, setting aside the garlic cloves.
  • Preheat oven to 375 degrees F. Very lightly grease a baking dish and place the cauliflower in the dish. Stir in one tablespoon of mayonnaise, coating all of the cauliflower thoroughly. Season to taste with salt and black pepper.
  • Mince the 3 boiled garlic cloves; also mince the remaining 4th garlic clove. Combine dry breadcrumbs, garlic and olive oil; spread over the top of the cauliflower. Bake, uncovered, in a 375 degree oven for 10 minutes; take out, dot with the butter and return to the oven for 10 to 15 minutes more, or until cauliflower is done to your liking (I like mine tender but not mushy).

PARMESAN CRUSTED CAULIFLOWER

Parmesan Crusted Cauliflower image

I am always looking for ways to serve veggies that my family will eat or that can be made ahead of time for company. This serves both well. The recipe works for each head of cauliflower. For two heads, double the amounts of garlic, olive oil, butter, cheese, and bread crumbs. Can be made the day before and reheated.

Time 50m

Yield 6 serving(s)

Number Of Ingredients 7

1 head cauliflower, steamed and broken into florets
1 tablespoon olive oil
1 tablespoon butter
1 garlic clove, minced
1/4 cup breadcrumbs
1/4 cup parmesan cheese, plus
1 tablespoon parmesan cheese, divided

Steps:

  • Preheat oven to 350 degrees.
  • Arrange florets in a baking dish.
  • Heat skillet. Add oil and butter.
  • When butter is melted, add garlic and saute until garlic is tender.
  • Add bread crumbs and 1/4 cup cheese. Toss well.
  • Sprinkle bread crumb mixture over florets.
  • Top with 1 tablespoon grated cheese.
  • Cover and bake for 30 minutes.

Tips:

  • Choose the right cauliflower. Look for a head of cauliflower that is compact and heavy, with tightly packed florets. Avoid heads with any signs of bruising or discoloration.
  • Cut the cauliflower into uniform florets. This will help them cook evenly. You can cut the cauliflower into florets by hand or use a food processor fitted with the chopping blade.
  • Toss the cauliflower florets in olive oil and seasonings. This will help them to brown and crisp up in the oven. You can use any seasonings you like, but some good options include garlic powder, onion powder, paprika, and salt and pepper.
  • Roast the cauliflower florets until they are tender and browned. This will usually take about 20-25 minutes. Be sure to toss the florets halfway through cooking to ensure that they cook evenly.
  • Serve the roasted cauliflower immediately. It can be enjoyed on its own as a side dish or used in a variety of other dishes, such as salads, soups, and stir-fries.

Conclusion:

Garlic-crusted cauliflower is a delicious and versatile dish that can be enjoyed in a variety of ways. It is a great way to get your daily dose of vegetables and is also a good source of fiber and vitamins. With its crispy crust and tender interior, garlic-crusted cauliflower is sure to be a hit with everyone at your table.
